kitniyot, but would likely be
difficult to find specifically
marked kosher l'Pesach, are
occasionally included in
recipes. Two such ingredients
that come to mind are
sweetened condensed milk
and Tabasco sauce.
In addition, there are a few
minor, and hard to miss, an-
noyances in this book (which
may have occurred in the
translation process from
Hebrew to English). For
instance, the singular word
matzah is used repeatedly as
a plural — rather than mat-
zot, the correct Hebrew
plural, or even matzahs from
the English vernacular. Also,
the word tablespoon is
variously abbreviated as
"tbsp." or as "tbs." and
periods are frequently omit-
ted from measurement ab-
breviations, which could
cause unnecessary confusion
when trying to determine in-
gredient amounts. My copy of
the book also has four pages
arranged in the wrong order.
In spite of these criticisms,
I would recommend The
Passover Gourmet to anyone
seeking innovative and ap-
pealing recipes for the holi-
day. If photographs tempt you
into trying new dishes, this
book should keep you cooking
for the entire eight days of
Pesach.
Following are some recipes
reprinted from The Passover

Gourmet.

FIG AND COCONUT
HAROSET
1 /2 lb. chopped dates
1 /2 lb. dried figs, chopped
1 cup grated coconut
1 cup dried apricots, diced
1 cup plum preserves
1 tsp. cinnamon
1 /2 tsp. ground cloves
1 cup sweet. wine
1 cup chopped pecans

Cook all the ingredients, ex-
cept the pecans, for about 30
minutes, in a covered sauce-
pan. Add small amounts of
water, as required. Remove
from the heat and add the
nuts.

DATE-APRICOT
CHAROSET
1 /2 cup pitted dates
2 cups apples, peeled and
diced
1 cup dried apricots
1 /2 cup chopped walnuts
1 /4 cup sweet wine

Cook the dates, apples and
apricots together in water to
cover for 15 minutes. Remove
the fruits from the water and
drain well.
Process the fruits with the
wine very briefly in a food
processor until coarsely chop-
ped. Add the chopped nuts.

1 2 1/2 to 3-lb. broiler fryer, cut up, skin removed
/2 cup MIRACLE WHIP Salad Dressing
1 teaspoon ground cumin
1 teaspoon onion powder
1 /2 teaspoon ground red pepper
1 /2 teaspoon garlic powder
1 1/2 cups crushed sesame crackers

Brush chicken with combined salad
dressing and seasonings; coat with
crumbs. Place on rack of broiler pan.
Bake at 400`; 45 to 50 minutes or
until tender.
3 to 4 servings
Variation: Substitute Miracle Whip
Light reduced calorie salad dressing
for Miracle Whip salad dressing.
