"The Mexican food business
is realizing its potential. They
serve beef, cheese, tomato and
lettuce but throw in a tortilla
and just enough spice so if
you close your eyes, you won't
think you're at Burger King.
"Pizza popularity continues
to increase with home deli-
very. Does diversity mean
nutrition? In some cases, yes.
The McD.L.T. adds a small
amount of fiber and vitamin-
containing vegetables to its
old burger.
"If menu diversification,
convenient location and chic
decor aren't enough to lure
you in, restaurants also
saturate the airwaves with
commercials.
"As restaurants proliferate,
so do concerns about health
and about diets on fried meat,
fried potatoes and soft drinks.
"The fast food industry is
becoming bigger and more
diverse. According to some,
this means fewer independent
restaurants and more empty
wrappers littering the neigh-
borhoods. Others say the com-
petition, concern about
calories and fats and other
factors seem to say that fast
food companies will have to
do creative things to lure
customers.
"The industry talks about
dinner and special foods to at-
tract diners who don't con-
sider fast foods a satisfying
meal. Frozen dinners, super-
market delis and salad bars
are waging a counterattack
on the franchised restaurants.
Pizza delivered to the door is
gaining more and more
popularity..
"Home-delivered burgers
and chicken don't hold up in
delivery. It's likely some fast
food restaurants will start a
phone-ahead order system.
"Fast food companies may
offer nutritious food that
tastes good. A vegetarian fast
food restaurant opened in
California with soybean, dou-
ble decker vegetarian sand-
wiches, tofu and frozen
yogurt. Many chains are offer-
ing salad bars with a large
variety of vegetables and
fruit.
"The surge of Mexican-style
fast food foreshadows Italian
and Chinese fast food. Fast
food restaurants have come a
long way since they sold ham-
burgers and fries for 25 cents.
But they could go even fur-
ther. Burgers and fries still
don't rate up there with broc-
coli as food of the week.
