Researched

Jerusalem — Amaranth, a
weed and flower not usually
used as an agricultural crop
in Israel and in western coun-
tries, is now being developed
for use in new food products
by scientists at the Hebrew
University of Jerusalem's
Faculty of Agriculture in
Rehovot.
Amaranth grain has the ad-
vantage of containing protein
of a high biological value, be-
ing low in fat and without lac-
tose. Since it lacks gluten,
amaranth flour can also be
digested by celiac patients
who are allergic to this com-
ponent of wheat flour. Other
persons with special nutri-
tional needs, such as
malnourished, long-term
chronically ill and elderly pa-
tients who have difficulty in
consuming the amounts of
food needed for proper nutri-
tion, will find it a boon. The
whole grain is high in dietary
fiber, and the plant yields
heavily even in areas of low
rainfall.

Aids Ethiopians

New York — The United
States Agency for Interna-
tional Development (U.S.
A.I.D.) has awarded a grant of
$450,000 to the American
Jewish Joint Distribution
Committee (JDC) for
humanitarian projects in
Ethiopia, it was announced
by Heinz Eppler, president.

He stated that the grant
will help JDC programs
begun last year to restore
agricultural capabilities to
12,000 rural families in two
areas of the Gondar province
of Ethiopia. The number of
people benefiting from the
program will now be tripled
to approximately 60,000 peo-
ple, mainly in areas which
were mostly seriously affected
by drought and famine in re-
cent years.
