But now, ex-Detroiters Barry and Susan Wine can put out their excellent four- star meals in a 2,300-square- foot, $400,000 kitchen . . . He is the son of Iry and Lil Wine, former owners of Barry's Surplus. They closed their controver- sial Casual Quilted Giraffe in the AT&T Building on Madison Ave. and 56th Street in New York . . . and moved their original Quilted Giraffe into the sleek 4,000-square- foot street-level space. The Casual Quilted Giraffe, which opened last August, served a profitable 200 meals a day at an average tab of $50 per person . . . But Barry and Susan expected to serve bet- ween 400 and 500 meals a day. So why operate two restaurants? . . . And what a great opportunity to get out of the cramped kitchen space at their Quilted Giraffe on Se- cond Avenue and 50th Street. On the side, the consolida- tion of the two restaurants is related to a plan to license the Quilted Giraffe name to a Japanese restaurateur who wants to open a branch in Tokyo . . . The menu and decor would be similar to that of the Casual Quilted Giraffe. "It's not that the Casual Quilted Giraffe lost money. It didn't, but it wasn't ap- .preciated," says Barry. "Many New Yorkers misunderstood "casual" to mean "cheap," he said, "and the industry thinks of Houlihan's or Ben- nigan's when it hears "casual restaurant?' Barry and Susan have not changed the $75 fixed-price dinner at their Quilted Giraffe, a restaurant con- sidered by most food profes- sionals, restaurant critics and New York gourmets as one of the city's finest. The former high-profile Casual Quilted Giraffe was never embraced by the New York food establishment .. . many of whom complained that its prices were too high and its black and stainless steel decor too impersonal. WHEN SELECTING car- rots, look for those that are firm and clean, with a smooth texture and good color .. . Deep orange carrots contain more Vitamin A than paler ones. SOME FOLKS thought Chuck Muer was sort of "phasing out" of the restaurant game to take it easy . . . with recent sale of his Charley's taverns and Meriwether's on Telegraph . . . But not the bow-tied. blue eyed gent folks like so much. New purchase by C.A. Muer Corp. is that of Harrison's in Ft. Lauderdale, Fla., a 300-seat restaurant which will be converted into a Charley's Crab . . . and ex- pected to open January 1988. His other Florida opera- tions are . . . Chuck & Harold in Palm Beach; Charley's Crab, Palm Beach; Charley's Crab, Sarasota; and Charley's Crab opening this year in Jupiter . . . Another location -will soon be under construc- tion in Boynton. Chuck still owns fine dining restaurants in Michigan, Ohio, Pennsylvania and Washington.
