2 cups pitted and halved
fresh Bing cherries
% cup slivered blanched
almonds
Dressing:
1/2 cup mayonnaise or
mayonnaise-like "salad
dressing"
11/2 to 2 tbsps. honey (or to
taste)
2 tbsps. apple cider
vinegar
1 tsp. lemon juice
1 /4 tsp. ground ginger
1/8 tsp. curry powder
(optional)
To serve (optional):
Red-tipped leaf lettuce or
other lettuce

In a large bowl, combine the
chicken, plums (or grapes),
cherries, and almonds. In a
small bowl, mix together all
the dressing ingredients. Pour
the dressing over the chicken-
fruit mixture, and toss light-
ly to combine. Chill several
hours to allow flavors to
mingle. If desired serve on a
bed of lettuce. Makes about 5
to 6 servings.

3 cups drained, canned
small white beans (or
cooked dry white
beans)
1 to 11/2 cups drained and
quartered, water-
packed, canned ar-
tichoke hearts
% cup diced sweet red bell
pepper
1/2 cup pitted ripe (black)
olives, coarsely
chopped
1 /4 cup finely chopped red
onion

cup chopped fresh
parsley
1 tsp. dried basil leaves
1/2 tsp. dried marjoram
leaves
V4 cup good-quality olive
oil
3 tbsps. red wine vinegar
Salt and ground black pep-
per to taste

pers, cut in half
lengthwise, cored and
seeded

In a large bowl, combine the
beans, artichokes, red pepper
and olives. In a small bowl or
jar, combine the herbs, oil and
vinegar, and mix very well.
lbss with the bean mixture;
then season to taste with salt
and pepper. Chill several
hours to allow flavors to
mingle. Spoon each serving
into one of the red pepper
halves. Makes about 6
servings.
