published in Great Britain, all
measurements have been
adapted for the American kit-
chen. Each recipe includes
preparation time and gives
directions in great detail.
Following are a few recipes
reprinted from Moroccan
Jewish Cookery and Middle
Eastern Cooking. It might be
interesting (and delicious) to
include them on your holiday
table during the upcoming
New Year season.

• 1 4-pound sea bass (or
similar fish)

For the filling:

•3

hard-boiled eggs
• 1 cup bread crumbs
• 1 cup chopped blanched almonds
• 1 small bunch fresh parsley,
stems removed and leaves finely
chopped
• '/2 teaspoon salt
• 1 teaspoon ground black pepper
(or to taste)
• 1/2 teaspoon ground mace
• % cup peanut or vegetable oil
• 3 large eggs, lightly beaten

For the sauce:

• 1 small onion, thinly sliced
• 2 tomatoes, thinly sliced
• 6 garlic cloves, finely chopped
(or to taste)
• 1 lemon, thinly sliced and seeded
• 4 bay leaves
• Pinch finely ground saffron
(optional)
• 2 to 4 tablespoons peanut or
vegetable oil
• 1 cup water

Have the fish boned from
the back as described above.
Lightly salt the cavity, and
set the fish aside.
lb prepare the stuffing,
mash the hard-boiled eggs in
a medium-sized bowl and add
the bread crumbs, almonds,
parsley, salt, pepper, mace
and 1/4 cup oil. Stir in the
fresh eggs, and work the mix-
ture until it is smooth.
Fill the fish with the stuff-
ing, and sew up the opening.
Lay the sea bass on an oven
tray of its length. Spread the
onion and tomato slices over
the fish. Sprinkle on the
garlic, then top with the
lemon slices, bay leaves and
saffron (if used.) Sprinkle the
oil over the fish, and then
pour the water around it.
Bake the fish in a 400-degree
oven for 45 minutes, basting
