10-inch square (or similar)
baking dish, combine the
cherry pie filling and the al-
mond extract. In a medium-
sized bowl, combine the
flours, baking powder, soda
and V3 cup sugar. Cut in the
butter or margarine with a
pastry blender or your finger-
tips. Add the buttermilk and
stir just a few times with a
fork until the dough is com-
pletely moistened. For a light
topping, do not overmix.
Drop large irregular spoon-
fuls of the dough over the
cherries. (Don't worry if the
cherries are not completely
covered; the topping will
spread as it bakes.) Sprinkle
the topping dough with the
remaining 1 tablespoon sugar
and the almonds. Bake in a
preheated 400-degree oven
for 30 minutes or until bis-
cuit topping is puffed and
lightly browned. Cool a few
minutes, then serve warm for
best flavor. Spoon out or cut
into large squares to serve. If
desired, each serving may be
inverted so that the cherries
are on top. Makes about 6
servings.
BREAD PUDDING
WITH RAISINS ,
1/2 cup granulated sugar
1 /4 cup packed light or dark
brown sugar
1 tsp . ground cinnamon
1 tsp. ground nutmeg
3 large eggs, lightly beaten
3 cups skim (or other type)
milk
2 tbsp. melted butter or
margarine
1 tsp. vanilla extract
6 cups packed cubes of
slightly stale challah
(about 10 slices from a
square loaf or 1/2
pound), crust left on
3 /4 cup raisins
In a large bowl, combine
the granulated and brown
sugar, cinnamon and nutmeg.
Remove 2 tablespoons of the
mixture and set it aside. To
the remaining sugar mixture,
add the eggs, and mix well.
Then stir in the milk, melted
• butter or margarine, and the
vanilla. Toss the bread cubes
with the raisins, and add to
the liquid mixture in the
bowl. Mix with a large spoon
so that all the bread cubes
are moistened. Let the cubes
rest about 15 minutes to soak
up some of the liquid.
Transfer the soaked cubes
and any extra liquid to a
greased or nonstick spray
coated 8-inch square baking
dish. Sprinkle the reserved 2
tablespoons of sugar mixture
on top. Bake in a preheated
325-degree oven for about 1
hour or until puffed an a
