The locale on Orchard Lake Road, just south of Maple, did a fair share of business when it was known as Bloomfield Canopy . . . and trial and error couldn't get Bloomie's off the ground . . . Now, however, as Machus Foxy's it is a team ef- fort proving its mettle. This is one of seven upscale restaurants and three pastry shops owned by Machus Enter- prises in Michigan . . . Machus Red Fox, Bloomfield Hills, Machus Adams Square, 160 by Machus and Machus Sly Fox, Birmingham, Foxy's at Great Oaks, Rochester, and now West Bloomfield. Machus Foxy's on Orchard Lake Road seats almost 200 on two levels . . . When originally taken over in Nov., 1985 and the entire property purchased in Jan., 1986, it was intended to be a downscaled family restaurant . . . However, a new menu has been put into focus for a finer style operation .. . There's a Heart Smart section that tells amounts of calories, fat, sodium and cholesterol .. . 15 entrees . . . five salads .. . more fresh seafood. My luncheon waitress, per- sonable and efficient Cecile Hobson, brought me a delicious piece of Baked Scrod with vegetables and a salad with cold crisp lettuce . . . But what attracted us most was her very own way of having customers in Cecile's station inform her when they are ready to order. It's so very simple, yet quite ingenious . . . At other places she had previously worked, Cecile tried to figure out a way about not "bugging" people as to whether they were ready to order. Then at Machus Foxy's West it came to her . . . Why not just tell the customers to put the plastic specials standard on its side? . . . The very fine Machus training program might have been given a new idea. Machus Foxy's West is no longer that pink of Bloomfield Canopy and Bloomies . . . The ivory or beige exterior is much easier on the eyes . . . There were no pictures on the walls or fresh flowers before . . . but they're there now . . . And Machus does little things like roasting turkeys and serving it cut directly from the bird . . . for either sandwiches or plate items. Machus is a name synony- mous with good food and pastries . . . Many of the pastries date back to 1906 when after immigrating from Germany, Hans Machus was a pastry chef at the famous Henrici's in Chicago . . . He came to this area in 1911 to open a Lansing pastry shop .. . and later, 1937, in Birmingham. Hans' original recipes for breads, Danish pastry and whipped cream luscious goodies are made and sold in Machus pastry shops and restaurants. The past 40 years, his son Harris, after serving in World War II, and wife Elaine, carried on the fine Machus tradition that has expanded to its pre- sent size . . . He was president of the Michigan Restaurant Association in 1973 and presi- dent of the National Restaurant Association in 1954 . . . Harris had graduated from Michigan State University's liberal arts program with a ma- jor in Economics . . . and was a Standard Brands grocery mer- chandising manager for Southwestern Michigan. However, when Hans passed on in 1941, he and Elaine mov- ed here from Battle Creek to operate the pastry shop in Bir- mingham . . . A few months later, though, Harris was drafted into the Army, leaving Elaine and his mother, Katherine, to mind the store .. .
