who has been serving African
Lion, zebra and wild bear for
almost a year now, plus reg-
ularly havingvenison and
wild game bird specials, has
been motivated by customers'
suggestions to put together a
sampler platter . . . "Many
people express interest in
new dishes when they dine
here, but they are reluctant
to gamble their whole eve-
ning on one 'experimental'
new entree. " . So Chef
Mark has come up with a
solution ... a wild game
sampler platter assortment of
popular wild game meats and
accompanying vegetables ...
every night from 5 to 7 p.m.
The first week's sampler
menu, which began Wednes-
day, and changes each week,
includes ... sauteed buffalo

tenderloin in a tomato demi
glaze, grilled 1/4 quail with a
wild fresh pesto sauce,

roasted duck with raspberry
sauce, grilled venison with
black currant sauce and

Rosanne Schlussel will pre-
mier her fall 1987 collection
at Southfield's Arts Cotillion,
a gala fundraiser ball being
held April 25 at Michigan
Inn.
It'll be emcee'd by popular
WJR radio personality War-
ren Pierce ... with title of "A
Night in the Big Apple" its
theme in raising scholarship
funds for young artists .. .
Cotillion is co-sponsored by
the Southfield Arts Council
and City of Southfield
Southfield Arts Council Vice
President Chris Christiano
one of the event's co-
chairpersons, says the ball
will recreate the glitz and ex-
citement of New York City's
night life.
Entertainment for the
event will feature some of the
top attractions in Michigan
... Performers will include
cabaret headliner Phil Mar-
cus Esser, jazz piano virtuoso
Bess Bonnier and popular
vocalist Barbara Bredius
Dancing rhythms will be by
the Executives, a 17-piece big
band. •
There'll also be strolling
musicians, mimes and magi-
cians ... as guests will be
made to feel like they're vis-
iting a New York night club.
A number of surprises
created especially for Cotilll-
ion by the Benchmark fine
restaurant in Michigan Inn
will be included in a gourmet
dinner.
