For the apple filling, corn-
bine the sugar, cornstarch,
cinnamon, nutmeg and salt.
Gradually moisten the dry
ingredients with the cider to
make a sauce. Stir the apple
slices into the sauce, and
heap the mixture in the pie
shell.
Streusel Topping:
If a double-crust apple pie
is desired, roll out a second
piece of dough, and cut some
small holes near the center
for vents. Gently place the
dough on top of the pie, and
crimp the edge of the top
crust to the edge of the bot-
tom crust to seal them to-
gether. To glaze the top crust
(so it is shiny and attractive),
brush it lightly with some
egg wash.
Bake in a preheated 425-
degree oven for 15 minutes;
then lower the eat to 350 de-
grees and bake 30 to 45 min-
utes longer or until th apples
are soft.
For the streusel topping,
omit the top crust and begin
baking the pie as directed
above. While the pie is bak-
ing, combine the flour, brown
sugar and cinnamon. Stir in
the melted butter (or mar-
garine) with a fork to make
crumbs. When the pie has
only about 15 minutes baking
time left, sprinkle as much of
the crumb mixture as desired
all over the top and continue
baking the pie until the
apples are soft.
/2 cup unbleached white or
whole wheat flour
1 cup packed brown sugar
1 /4 tsp. ground cinnamon
1/4 cup butter or margarine,
melted
For the pastry dough, com-
bine the white flour, whole
wheat flour and salt. Work in
the shortening with a fork or
a pastry blender. Stir in the
ice water 1 tablespoon at a
time, adding just enough so
that the dough holds together
in a ball. Wrap well and chill
thoroughly.
(Note: For a double-crust
pie, make a double recipe of
dough. Divide the dough in
half, and wrap each piece
separately.)
For the bottom crust, roll
out the chilled dough into a
circle, and use it to line a
10-inch pie pan. Be careful
not to stretch or pull on the
dough after it is rolled out
because that may cause the
crust to shrink during bak-
ing. To help keep the bottom
crust from getting soggy,
brush it lightly with some
egg wash. (To make the egg
wash, simply beat the egg
with the water until well
mixed.)

ficials reacted cautiously to
reports from Washington last
week that the CIA had tried
to operate a spy within the
Israel Defense Force in 1982.
The report has headlined in
The Jerusalem Post.
It quotes Senator David
Durenberger (R. Minn.)
telling a group of some 100
Jewish activists in a meetiig
sponsored by the American
Israel Public Affairs Commit-
tee in Palm Beach that
former CIA Director William
Casey had authorized a
covert operation against
Israel long before the Pollard
affair began. Durenberger is
the immediate past chairman
of the Senate Intelligence
Committee.
Deputy Prime Minister and
Foreign Minister Shimon
Peres told Israel Radio there
was no truth to the report, ad-
ding he understood IDF
sources had earlier said they
had no information about the
alleged spy, a "high-level
Israeli officer in the IDF who
had originally made aliya
from the U.S." During the
Lebanon war he reportedly
was "bumped" by the IDF.
A similar denial was made
by Defense Minister Yitzhak
Rabin, in an interview with a
West German newspaper. He
was answering a question
arising from a statement
allegedly made by convicted
spy Jonathan Pollard that
U.S. agents had been em-
ployed in Israel.
