SOME GENERAL GUIDELINES for a low cholesterol, low saturated fat/triglyceride lowering diet ... by Beverly Peiss, regis- tered dietician in the Car- diovascular Fitness and Re- habilitation Department at Sinai Hospital ... Substitute poultry, fish, veal, legumes and seeds for red meat as much as possible. If red meat is eaten, use lean cuts and trim all visible fat. Remove skin from poultry before cooking. Bake, broil, roast or stew rather than fry, and avoid commercially fried foods. Use meat as a side dish more often or use small amounts in combination with a grain such as rice or noo- dles. Substitute skim milk for whole milk. Replace cream with skim milk or non-fat dry milk powder. Substitute a liquid margarine for butter or shortening if you must use fats at all. Use only polyunsaturated cooking oils. Substitute low fat cheeses for regular cheeses (Grams of fat need to be less than 2 per ounce.) Avoid high saturated fat, baked and fried items such as donuts, pastries, cheese cake, pie, cake and cookies. Substi- tute allowed ingredients in home-baked foods such as skim milk, egg substitutes and "butter buds". Limit egg yolks to 2 per week. Avoid products containing coconut or palm oil. Eliminate organ meats (i.e. kidney, liver). In- crease fiber consumption from whole grain breads and cereals, fruits, vegetables, beans, peas and oats. Read labels and avoid foods that contain "hydrogenated" or "partially hydrogenated" vegetable fat as the first fat listed on a label. Avoid foods described as "non-dairy". Be- ware of labels that claim that the food product "contains no animal fat" or has "zero cholesterol" as such foods may contain hydrogenated or hardened vegetable oil. Reach and/or maintain ideal body weight. Avoid alcohol and sweets. Do not skip meals! Balance food intake through- out the day.
