COOKING
Boil a pound of fresh
chestnutsfor ten minutes. Lay
them out on a baking sheet.
Make a sharp, deep slit, with a
knife, in each nut's shell. Roast
at 350 degrees for 20 minutes,
or until soft and mealy.
CRANBERRY SAUCE
1 pkg. fresh cranberries (12
ozs.)
3/4 cup water
1/2 cup honey
1/2 tsp. cinnamon
1/4 tsp. vanilla extract, op-
tional
Mix honey and water in a 2
qt. pot. Boil. Add cranberries.
Bring to boil again. Stir in cin-
namon. Lower heat and sim-
mer, 10-12 minutes, stirring
occasionally. Cool at room
temperature. Refrigerate.
LIGHT 'N LUSCIOUS
VEGETABLE SOUP
Saute 1 large, diced onion,
and 2 cloves garlic, in 2-3 tbsps.
safflower oil. Add 8 cups water.
While bringing water to boil-
ing point, add:
1/2-1 cup fresh peas
2-3 carrots, diced
1-2 handfuls fresh string
beans
2 kohlrabi, peeled and cut in
chunks
1 large zucchini, peeled and
sliced in rounds
1 turnip, diced, opt.
1 parsnip, diced
Season with salt, dried dill
and parsley flakes. When
water has boiled, lower flame,
and simmer, covered, 2 hours.
Taste, correct seasoning if de-
sired and serve.
Variations
For a thicker soup, add a few
tbsps. of barley at beginning of
cooking. Another thickening
idea is to add roux. Add cold
water to a tablespoon of flour,
till it has acquired a pasty con-
sistency. Stir into soup during
last ten minutes of cooking.
Omit fresh peas. During last
15 minutes of cooking, add a
box of frozen mixed vegetables
to soup.
NUTRI-PIZZA
Arrange slices of whole-
grain bread on a baking sheet.
Add a slice of kosher muenster
cheese to each bread slice. Top
with tomato sauce, oregano
and garlic powder. Bits of
chopped onion may be added.
Bake at 350 for ten-15 minutes
or until cheese has melted.
Day School Hosts
An Open House
Akiva Hebrew Day School
will hold an open house for pro-
spective parents, 7:30 p.m.
Wednesday, at the school,

The evening will begin with
a reception, followed by a pro-
