LOW CHOLESTEROL CHALLAH

6 cups all-purpose flour
2 tablespoons sugar
2 teaspoons salt
Dash powdered saffron, optional
1 package FLEISCHMANN'S'
RapidRise Yeast
1 cup hot water (125° to 130°F)

Makes 2 loaves

1/2 cup FLEISCHMANN'S Sweet
Unsalted Margarine, softened
1 cup FLEISCHMANN'S EGG
BEATERS Cholesterol Free 99%
Real Egg Product, at room
temperature
Sesame or poppy seed

Set aside 1 cup flour. In large bowl, mix remaining flour, sugar, salt,
saffron and FLEISCHMANN'S RapidRise Yeast; stir in hot water and
FLEISCHMANN'S Sweet Unsalted Margarine. Mix in 3 ,4 cup
FLEISCHMANN'S Egg Beaters and enough reserved flour to make soft
dough. Knead until smooth and elastic, 8 to 10 minutes. Cover: let rest
10 minutes.
Divide dough in half. Divide one half into 2 pieces, one about Y3 of dough
and the other about 1/2 of dough. Divide larger piece into 3 equal pieces;
roll each into 12-inch rope. Braid the ropes; seal ends. Divide smaller
piece into 3 equal pieces; roll each into 10-inch rope. Braid ropes; place
on top of large braid. Seal together at ends. Place on greased baking
sheet. Repeat with remaining dough. Cover; let rise in warm draft-free
place until doubled in size, about 1 hour.
Brush loaves with remaining Egg Beaters; sprinkle with seeds. Bake at
375°F for 20 to 25 minutes or until done. Remove from sheets;
cool on wire racks.

difficulties. "Just what type of
person are you looking for?"
Shapiro asks. "Is she supposed
to clean or just play with the
children? Is she a babysitter or
a nursery school teacher?"
Marcie Uday and Tom Riley,
a husband-wife team who own
a training and consulting firm,
found the perfect answer to
Shapiro's questions. Uday ex-
plained, "We work all the time.
We're sometimes out of the
house at 6:30 and return after 6
in the evening. At first I was
looking for a 'wife' to care for
our three boys. Instead, I found
a nanny."
Their nanny is a 22-year-old
au pair from London, England.
Angela Byrne was sent to them
for one year through Au Pair in
America, American Institute
for Foreign Study Scholarship
Fund. The Institute's local
counselor, Carolyn Hilty, pre-
interviews interested families,
matching them to a compatible
au pair, and continues to
monitor the relationship, visit-
ing the home once a month.
She has placed 12 girls so far
and expects at least 35 by
February.
The glossy Au Pair in
America Guidebook lists the
au pair's qualifications and re-
sponsibilities. She must speak
English fluently, be of good
character and health, enjoy
working with children and
possess an international
driver's license.
Once with her family, her
duties include helping parents
look after, feed, bathe and play
with the children, taking care
of the children when the par-
ents are not home, driving
children to lessons or school,
light cleaning, preparing me-
als, doing the children's laun-
dry and keeping her own quar-
ters tidy.
A host family is responsible
for providing private room and
full board, inclu'ding the au
pair on family outings, some
social events and vacations,
and giviiig her one free
weekend a month and a two-
week vacation taken at a
mutually agreed upon time.
The host family also agrees
to pay foundation processing
fees, the au pair's transporta-
tion from New York, $100
weekly pocket money and up to
$300 in community education
tuition fees. The total bill: ap-
proximately $7675 for the
year.
Uday feels the program is
not only cost effective, but a
wonderful, broadening experi-
ence for her children. "Angela
is a super person, respectful,
energetic, giving, polite and
kind. I trust her and the kids
adore her. Our kids are par-
ticipating in cultural ex-
change."
Privacy or lack of it is not an
issue with the Uday-Rileys,
even though they live in what
Uday terms, "a very modest
condominium in Southfield."
Using space creatively, they
remodeled the lower level into
an at-home office and a chil-

dren's playroom. They also
transformed one of their three
upstairs bedrooms into a dorm
room accommodating a loft-
style bunk bed for four year old
Michael and two year old
Evan, and a crib for six month
old Matthew. The second bed-
room is theirs; the third re-
served for the nanny.
"We love having our house
filled with people and ac-
tivity," said Uday. "It reminds
me of my grandmother's house.
I vividly remember her house
full of relatives and friends."
Dale Saham, vice president
of Acacemy of Health Careers,
a private Oak Park vocational
school, believes there is a grow-
ing need for well-trained,
home-grown nannies. AHC,
licensed by the Michigan De-
partment of Education, offers a
14-week comprehensive nanny
course designed to produce a
"well-trained, nuturing care
giver who will blend into the
family team." Saham hopes to
attract women re-entering the
job market who have had prev-
ious child care experience rais-
ing their own children.
While each family solves the
day-care dilemma in its own
style, Shapiro feels the ideal
provider would be a family
member such as a grandparent
or aunt who is paid the going
rate. "At least you'd have the
advantage of the caregiver lov-
ing your children."
Love and relinquishing con-
trol. That's what causes day
care guilt. Shapiro asks par-
ents to be realistic. "No one
will ever take care of your chil-
dren exactly like you will. If
you can deal with this, you can
attempt day care." ❑

judge panel trying John
Demjanjuk granted the sus-
pected Nazi war criminal a
one-month postponement
last week at the request of his
American attorney, Mark
O'Connor, to allow him addi-
tional time to study prosecu-
tion documents.
The trial of the Ukrainian-
born former resident of Cleve-
land, Ohio, opened formally in
a Jerusalem District Court on
November 26 but was ad-
journed until January 19
after a 40minute preliminary
hearing. It is now scheduled
to resume February 15.
The accused was repre-
sented at the postponement
hearing by an Israeli lawyer,
Yoram Schechtel, who agreed
to assist O'Connor in prepar-
ing the defense. Schechtel will
not take an active part in the
trial but will be available for
consultation by O'Connor on
points of Israeli law.
The judges were critical of
the American lawyer for what
