2 tsp. lemon juice
2 tsp. vanilla
Grated rind of a lemon (if
desired) (colored part
only)
1 to 1 1/4 cups egg whites, at
room temperature
1/2 tsp. cream of tartar
',72 cup granulated sugar
(scant)
Sift together flour, baking
powder, 1 cup sugar and salt.
Make a well. Add yolks, oil,
water, juice, vanilla and rind.
Beat egg whites in a large,
very clean mixer bowl, add
cream of tartar, then add 1/2
cup sugar gradually and beat
until a meringue consistency.
While whites are beating, stir
the egg yolk mixture with a
spoon. When whites are re-
moved from Mixmaster, beat
the egg yolk mixture, using
the same beaters, for 1 min-
ute or until smooth.
Fold the egg yolk mixture
into the egg white mixture
gradually, blending well.
Pour into an ungreased 10-
inch tube pan, clear air bub-
bles. Bake at 325 degrees for
55 minutes. Turn oven to 350
degrees and bake for 15 min-
utes longer. Invert on small
sturdy glass. Cool for at least
1 hour. Remove from pan and
store.

Richard Kellman
Richard Kellman has as-
sumed the position of executive
director of SPACE, the Na-
tional Council of Jewish
Women-sponsored service for
separated, divorced or
widowed men and women and
their families.
Kellman is a certified social
worker and counselor. He has
been in private practice, and
has been involved in commu-
nity outreach workshops pre-
sentation. He also has de-
veloped programs and taught.
Kellman holds a B.S. degree
in psychology from Wayne
State University and a M.A.
degree in counseling from Oak-
land University.
