Preheat the oil to 375 degrees. In a large bowl, use a fork to lightly beat the eggs; then beat in the milk and cream-style corn. Put the flour and baking powder on top of the milk mixture; then mix the ingredients together just until the batter is almost completely moistened. Add the corn ker- nels, and stir just until evenly distributed. For each fritter, drop a rounded teaspoonful of batter from a spoon into the hot oil. Don't crowd the fritters, and don't allow them to touch one another. They will puff consid- erably. When the fritters are browned on the bottom, turn them and cook them on the other side. They will need about 2 to 3 minutes total fry- ing time. Remove them from the oil with tongs or a slotted spoon, and drain them well on paper towels. Continue making fritters until all the batter is used. Serve warm. Makes 3 to 4 do- zen. HUSH PUPPIES 1 cup commercial butter- milk 1 tbsp. dried instant minced onion Oil for deep-frying 2 large eggs 11/2 cups yellow or white cornmeal, preferably stone-ground • Y4 cup all-purpose flour 2 taps. sugar 4 taps. baking powder 1/2 tsp. salt In a medium-sized bowl, combine the buttermilk and instant minced onion. Let the mixture rest so that the onion can absorb some moisture and soften. Meanwhile, preheat oil to 375 degrees. Add the eggs to the buttermilk mixture in the bowl, and mix well. Put the cornmeal, flour, sugar, baking powder and salt on top of the buttermilk mixture; then stir until all the ingredients are very well combined. Let the batter rest 5 minutes; then stir just once or twice to deflate any large bubbles. For each hush puppy, drop a rounded teaspoonful of batter into the hot oil. (Put the batter on a spoon; then push it off with your finger or another spoon.) Don't crowd the hush puppies, and don't allow them to touch one another. When the hush puppies are browned on the bottom, turn them and cook them on the other side. they will need about 2 to '3 minutes total frying time. Remove them from the oil with tongs or a slotted spoon, and drain them well on paper towels. Continue making hush pup- pies until all the batter is used. Serve warm. Makes about 31/2 dozen. PONTCHIKI This recipe is from Jewish Cooking from Around the World by Josephine Levy Bacon (Barron's). 21/2 cups all-purpose flour 1 tsp. baking powder 2 large eggs 11/2 cups sour cream 2 tbsps. granulated sugar V4 tsp. salt V2 tsp. vanilla extract . Oil for deep-frying 3 cups confectioners' sugar Combine all ingredients ex- cept oil and confectioners' sugar in a large mixing bowl. Blend well; the batter will be soft. Heat the oil in a deep-fryer until it is so hot that a cube of bread dropped into it will brown in 1 minute, about 375 degrees F. Drop a few table- spoons of the mixture carefully into the oil and frying until golden brown on one side; then turn and fry on other side, about 3 minutes. Drain on paper towels and continue with remaining batter. When all the doughnuts are done, pour the confectioners' sugar into a shallow platter and roll doughnuts in it to coat thoroughly.
