kosher). In some countries,
including Israel, where beef
is scarce, they are acceptable.
In America, the necessary
trabering, particularly the
removal of the sciatic nerve
and blood vessels which sup-
ply it, requires too much time
and expertise to make it eco-
nomically viable.

kosher beef, according to
Gottlieb.
Monarch, which currently
slaughters about 500 cattle a
week by non-kosher methods,
added its kosher operation
about eight years ago after
the last kosher beef packing
house closed. "I'm no angel. I
make no pretense of it," says
Gottlieb. "I am a business-
man concerned about profit."
But profit was not the rea-
son for the decision. "We got
into it out of a sense of moral
obligation to the community,"

ing a week in November. Tel Aviv Farmer Jack indicates
two stores, in Southfield and West Bloomfield. Three stores
at the end of the list - Bernard and Son, New Orleans,
and Singer's - are not supervised by the Council of Or-
thodox Rabbis. Strictly Kosher Meats in Oak Park is not
represented because it was closed while preparing to move
at the time of the survey.
