small producer of honey,
yielding about 2,000 tons an-
nually. Competitive prices on
the world market restrict ex-
port levels, but there's
enough honey to sweeten life
in the country and to export
to Jewish communities in the
U.S.A., Europe and Australia
for dipping the Rosh
Hashanah apple and challah
and as an essential ingre-
dient in honey cake for the
festivals.
More than half the honey
in Israel comes from inde-
pendent producers who keep
hives in the hundreds rather
than the thousands. They
treat their bees with the
same care and attention
lavished upon household pets
and perhaps that's the secret
of the sweetness. -

In his 50 years in Israel he
has built up a valuable li-
brary on the subject with
books in six languages and
beekeeping information going
back over a century. In a
country of immigrants it's not
surprising that even his bees
come- from abroad — the
Queen bees from America
and the workers from Italy,
where the bees are the best
honey producers.
Sadeh works in a little
stone building refining and
packing his honey as a labor
of love. Long ago, he planted
a "garden of the bees" in an
orchard which protects the
hives from wind and sun.
There, he says, any sick per-
son can be cured just by brea-
thing the nectar in the air.
Sadeh calls his bees "small
flying pharmacies" and be-
lieves in the therapeutic
properties of honey for curing
ailments from hay fever to
rashes.
Bee-sting poison is an an-
cient remedy for rheumatism
and Sadeh is investigating
the properties of propolis, the
sticky substance that is
scraped from the hive and
appears to have many uses
for healing.
