The cavity left in each apple should be about 1 inch wide. Peel only the top third of each apple, and carefully prick the peeled part in several places with a fork. Stand the apples in a circle in a 9-inch round or 9- to 10-inch square microwave-proof bak- ing dish. Divide the raisins (or currants) and butter (or margarine) evenly among the apple cavities, almost filling each cavity to the top with raisins. Drizzle some honey into each apple cavity and over the peeled part of each apple. Pour the cider over and around the apples. Cover the baking dish, and micro-cook the apples on full power, rotating the dish every 3 minutes and basting the ap- ples once of twice, for a total of about 10 minutes cooking time or just until the apples test tender with a fork. (Do not overcook them or they may become mushy.) Let them rest, covered, for about 3 minutes to complete the cooking. Serve each apple in a small bowl with some of the cooking liquid.
