spreading the apple from
Pennsylvania to Indiana.
Though the itinerant Chap-
man became famous as
"Johnny Appleseed," he did
not, as some legends have it,
randomly toss apple seeds
wherever he went; but actual-
ly took the time and had the
know-how to establish a large
number of apple seedling
nurseries.

wagon filled with dirt and ap-
ple seedlings across the ,coun-
\_ try. Apples flourished in the
cool climate of the Northwest,
particularly in Washington
state, which has become the
, largest producer of apples in
the country. Thirty-four other
) states also produce apples in
significant quantities, mak-
ing the United States the
\ world leader in apple
/- production.
Although thousands of dif-
ferent apple varieties exist to-
\_ day, only about a half dozen
are generally available in our
supermarkets. Tho of my per-
sonal favorites for both
\- eating and baking are Gran-
ny Smith and Golden Deli-
cious. As with many apple
varieties (including the
popular Delicious), both of
these were discovered com-
pletely by chance. They grew
from seeds that were never in-
tended for planting.
Granny Smith apples, rela-
tively new upstarts which
have rapidly earned many
fans in this country, originat-
ed in Australia at the edge of
"Granny" Marie Ann Smith's
orchard where some over-the-
hill apples had been discard-
ed. The Granny Smith is a
moderately tart, green apple,
that is wonderfully crisp yet
juicy,and has excellent keep-
ing quality. It also holds its
/, shape well when baking. It is
my personal favorite for
eating out-of-hand.
Golden Delicious apples are
not, as many assume, a
yellow-green version of
Delicious apples, but are a
completely different variety
with different qualities. When
first discovered, the Golden
Delicious was called the
Mullens' Golden Seedling,
but was renamed when it was
sold to the same commercial
nursery that had successful-
,- ly marketed the Delicious
type. The Golden Delicious is
sweet, usually firm to crisp,
