following recipe has been excerp-
ted.
Notes Ms. Sirkis, "A cool and
refreshing fruit soup that fits the
Israeli warm summer. It is served
at the end of meals or as a cold
beverage in between them."
6 cups water
2 tbsps. fresh lemon juice
1/2 cup sugar
2 cups diced fresh fruit (ap-
ricots, apples, pears,
peaches, plums)
1/2 cup raisins
1 tbsp. cornstarch
1 / cup water
Put the 6 cups water, lemon
juice and sugar in a large stain-
less steel pot. Dice the fruits into
bite-sized chunks, removing the
inedible parts. Drop these
chunks, as you cut them, into the
water. This will prevent discolor-
ing. Add the raisins. Bring to a
boil, and cook on moderate-high
heat for 1 hour.
Mix the cornstarch with the 1 /3
cup water and add to the boiling
soup. Cook for 2 to 3 minutes
more, until the soup thickens
slightly. Remove from heat and
let cool to room temperature.
Then chill thoroughly in the re-

frigerator. Serve very cold in nice
glasses or decorative small bowls.
Makes 6 to 8 servings.

AVOCADO HADAR
This avocado stuffed with cit-
rus is the simple but tasty crea-
tion of Chef Mordechai Drucker
and appeared on a recipe card in
a series called Israeli Cooking
(Sharon Publications).
3 medium-sized avocados
2 navel oranges
2 grapefruit
12 cherries

To ensure that the avocados
will absorb the fruit flavor, they
must be thoroughly ripe. Dish
should be prepared about 30
minutes before serving.
Slice each avocado, lengthwise,
into two halves and remove the
large pits. Peel the citrus fruit
and separate into segments.
Carefully remove the membranes
surrounding each section.
Arrange the fruit on each av-
ocado half, and let stand for 30
minutes until some of the juice is
absorbed. Decorate with cherries.
Serve with a small spoon, as a
first course. Serves 6.
