If the dish is too intricate or requires extra buying, give Ernie a little time . . . but he'll make it for you. • One of his great dishes and big sellers is called Rigatoni Joe . Back in 1938, the late James Beard wrote a U.S. News and World Report article about pasta to become the food of the '80s . His item was about a place in New Jersey that served only pasta ... and was called Rigatoni Joe . . . Ernie's big favorite comes with his own homemade meat sauce . . . and sauteed Italian sausages. MEMORIES THAT FADE DEPT. . .. Those Greene's Ham- burgers we used to enjoy. on Schaefer and Seven Mile evi- dently are no more ... Surely the Greene's at Orchard Lake Road and Ten Mile are not the same . . . They are very poor replicas of the ones we'd once do almost any- thing but kill for. JOHN LAFFREY is back in action again ... The around-town restaurateur opened Scooper's Bar & Grill about a month ago on Telegraph and Square Lake Rd. . . . former site of Shangri-La • West . . . in Bloomfield Town Square. He always comes up with new concepts . . . and this Aimee cit's -- huge sandwiches, fres,h, inexpen- sive dishes and a lot 6f television in various areas . .. even with differnt programming. Chris Fogo, who a lot of folks remember from the northwest, is John's chef ... Two fresh turkeys are roasted daily among the many foods . . . and a grill some- what like John's former place on Seven Mile and Telegraph that still bears his name is behind a bar. His kitchen at the 130-seater Scooper's is open everyday except Sunday, 11:30 a.m. to 12:30 a.m. The restaurant is about 600 feet from Showcase Cinetha 6-10 . . . and across the street from Showcase Cinemas 1-5. NICE TO SEE DEPT.... the very pleasant employees at Sign of The Beefcarver restaurants ... very polite and cooperative. DON'T KNOW WHAT they do, but that broasted chicken at Brass Pointe, Orchard Lake Rd. just north of Ten Mile, is superb . . . so moist, healthy . . . and goodness throughout . . . The B-B-Q ribs so many people are raving about at Brass Pointe are made 'on a continuously-turning rotisserie. . "GREAT PASTURES," Or- lando, Fla. area's first kosher res- taurant,' will add meat dishes to its menu of fish, dairy and veg- etarian specialties beginning this week.
