restaurant game . . . Twenty-one
years ago, Don Vargo was a bar-
tender at the Moby Dick Lounge
. . . its manager . . . and then
owner, 1965 to 1970 . . . In 1970 he
bought Rampart Street from the
late Eddie Shey on Six Mile west
of Middlebelt, changed its name to
Vargo's and was there 11 years.
His knowledge in food and serv-
ice is well noted . . . also that of
being an excellent connoisseur
when it comes to wines.
He opened the 1940 Chop House
on E. Jefferson in October ... and
it has become one of Detroit's
leading restaurants.
It is a beautiful place . . . with
purple neon strips, gray tones,
glass blocks and a soothing art
decor that promotes intimacy and
elegance.
Everything served at 1940
Chop House is top quality . . . this
is the only ballgame Don Vargo
knows how to play . . . the best of
the best . . . There's not even any
well whiskey . . . customers may
order the brands they wish .. .
without price change . . . Playing
games in running a restaurant is
not Don's bag . . . he's not even
interested in "marketing" wines
. . . being satisfied with making
barely two times instead of the
three and four mark-up at many
other places . . . His wines are all
cork-finished . . . no metal caps.
I had lunch at 1940 Chop House
recently and was amazed at the
$3.50 price for a seven-ounce por-
tion of any wines . . . even from
$100 bottles . . . Whatever left
over at the day's end is used for
cooking.
Erniest Ziembroski, our cordial
and gracious tuxedo'd waiter, effi-
ciently brought us a fresh, crisp,
cold wedge of lettuce . . . and a
wonderful piece of swordfish.
At another table, a couple was
extolling the delicious tenderness
of their steaks . . . What they were
devouring with such ecstacy was
certified Angus beef, known for its
high degree of marbling, fine tex-
ture and consistency in every cut
. . . and considered the highest
choice for prime palatability.
Don Vargo's 1940 Chop House
is the only restaurant in the De-
troit area serving certified Angus
beef exclusively six days a week.
His restaurant Is probably the
prettiest and best run dining op-
eration in Detroit . . . art deco
lighting fixtures in padded booths
divided with etched frosted glass,
art deco atmosphere, tall tables,
regular size tables, booths, piano
bar, recessed ceiling lighting .. .
seating for about 300 on two levels
(180 upstairs, 120 downstairs)
both with exhibition cooking.
It's so nice to be greeted by such
a pleasant and gracious day man-
ager like Suzanne Glass . . . and
the waitpersons are the epitome of
class.
The piano music at lunch is soft
and melodious . In the evening
Jerry Robinson is at the piano bar
Mondays from 8 p.m... . Jan Van
Gorden is Mon.-Fri.,5 to 8 . . . The
Beth Merry and Crystal duo takes
over at 8 p.m. . . . doing a fine job
for Don's customers.
Lunches at 1940 Chop House
are served Monday-Friday 11 to 4

. . . Dinners are Monday-
Thursday, 5 to 12 • midnight .. .
and Friday and Saturday til 1
a.m.
. It is not an inexpensive place to
dine . . . but all-around quality
counts here . . . and shows . . . His
restaurant is somewhat like Don
Vargo's life style . . . and people
who care are flocking to his res-
taurant . . . just east of the Re-
nnaissance Center and Chrysler
Expressway . . . with its own pri-
vate- valet parking lot next door.
Sure dining at 1940 Chop
House costs more . . .but it's a
whole lot better, too, than most of
the others, with higher prices .. .
by far.
TOO BAD DEPT.... Sorry to
learn that Norm LePage and Eric
Lutz will not open their much an-
ticipated The Regent banquet hall
.. which was to be located at
former locale of Standard Club on
Northwestern . . . Persons with
booked parties have been con-
tacted . . . for possible placement
elsewhere.
Norman's Union Station in In-
dianapolis opens April 25 . . . at
former Union Train Station next
to Hoosier Stadium . . . It will be
patterned after the Eton Street
Station in Birmingham, owned by
Norm and Anthony Brown .. .
The new Norman's Union Station
will be owned by Norm and Bob
Borns.

. . . Shelley Rogow, daughter of
Sally and Roy Rogo,w . . . morn-
ings and noons at Sunrise Cafe, 10
Mile and Greenfield . . . always
smiling, fast, personable and effi-
cient.
WHEN PAT ARCHER and
staff give' a party . . . they give a
party! .. . As usual, his spectacu-
lar anniversary shindig was just
that. . . . with a bit of dazzling
thrown in . . . This was just
number eight . . . and although I
was forced to miss last year, from
the way folks talked, they get bet-
ter each time . . . As they say in
show business, wonder what Pat
will do for an encore . . . when
number nine comes around? .. .
And number ten? . .'. It boggles
the imagination.
Jazz trumpeter Al Hirt started
it by sending a gal with his sing-
ing telegram to•Pat . . . The floor
was crowded with people . . . while
overhead, Pat's wife living in
California, Darlene Archer, had
come in to elaborately decorate
the ceiling . . . The waves and
waves of fine tulle as used in wed-
ding walls . . . was intermixed
with Oriental art on kites that
had some folks walking around
like they had stationary kinks in
their necks . . . Darlene came in to
put the Oriental figures with son
Chuck, but couldn't stay for the
party . . . having to get back to
California.
Chef Marty Wilk made the ice
carving of a large eight that stood
outside . . . While his buffet table
had another carving of a large
Coho salmon ... Marty has been
at •Excalibur almost since it
opened (short by six months) . . .
and hisspread for the anniversary
drew a lot of oohs and ahhs.
On display was a big ten-pound
lobster . . . and whole Alaskan
king crab . . . The crowd that kept
