One familiar with real
(homestyle) Jewish
cooking, would probably de-
scribe it as satisfying, skillfully
spiced, filling and delicious.
Kugels (baked puddings) of all
types, strudel, and stuffed cab-
bage, would be welcome addi-
tions to almost any table. But
may of the East European dis-
hes adopted by the Jews who
hail from that region, are high
in calories, saturated fat and re-
fined flour.
With a few modifications of
the basic recipes, however, this
cuisine can be as healthful and
nutritious as it is tasty. Below
are some modern adaptations of
traditional Jewish dishes.

SHERBET
This is a light and refreshing al-
ternative to heavy desserts.

4 cups of sliced fruit
1/2 cup honey
1 tbsp. fresh lemon juice
1 tsp. vanilla extract
Place fruit in blender con-
tainer. A nice combination is
strawberries, Concord grapes,
pineapple and bananas.
Add honey, lemon and vanilla,
and blend at high speed for one
minute. Place in freezer until
frozen around edges. Blend
again to obtain creamy,
sherbet-like texture. Freeze in
serving dish, until firm.

KNAIDLACH

KISHKE

3 large carrots

1 stalk celery
1/2 medium onion
oil
whole wheat flour
1 tbsp. paprika
salt, if used
Grate carrots, celery and on-
ions, coarsely, into a large bowl.
Pour in enough cold-pressed oil
to almost reach top of grated
vegetables.
Sprinkle with paprika and
add 1 tsp salt, if used. Then add
enough whole wheat flour to
form a soft dough. Shape into
one or two long rolls, and wrap
each roll in foil. Bake at 400 de-
grees for one hour.
Alternate method: This comes
out even better, when the foil-
wrapped rolls are dropped into a
pot of stew — cholent. They are
cooked slowly, along with the
stew.

CHARIF (Spicy Bread Dip)

very ripe, juicy tomatoes
3 cloves garlic
1 tbsp. oil
1 tbsp. vinegar
salt, if used
dash black pepper
ground hot' red pepper, or
cayenne, to taste
Blend all ingredients in blen-
der, tasting for desired strength.
Consistency should be that of
homemade applesauce. Serve
chilled, as a dip for bread or a
sauce for fish.

1/4 cup club soda
% cup whole wheat flour
2 tsps. kosher vegetable sea-
soning, or small amount
of salt
1-2 tsps. parsley flakes
dash pepper
dash sage, optional
Beat eggs. Add sletzer and oil,
then other ingredients. Form
balls with wet hands. Let the
balls stand for 15-20 minutes.
Drop them, then, into boiling
water or soup. Cook for 20 min-
utes, or until the dumplings rise
to the surface.

POTATO KUGEL

eggs
Idaho potatoes, pared
1 onion, finely diced
4 tbsps. cold-pressed soy or
safflower oil
dash black pepper
dash garlic powder
1 tsp. salt, optional
Crack eggs into large bowl.
Grate in potatoes and add onion.
Add oil and spices, and mix
well.
Heat oven to 400 degrees.
Grease a deep casserole dish
with some oil, and lecithin, if
desired. Pour in kugel mixture.
Bake for one hour, until brown
and crispy outside and tender
inside. This is traditionally
served with roast chicken and
cucumber salad, and occasion-
ally honeyed carrots.

Rabin Assesses
Arabs' Defense
Capabilities

Jerusalem (JTA) — The Arabs
invested some $24 billion in
armament last year, but Israel
is not aware of the enormous
armament race going on in the
region, Defense Minister Yit-
zhak Rabin told a Labor Party
convention in Ramat Gan last
Sunday.
Rabin said it was Israel's luck
that the Arabs were unable to
get their forces together in a
coordinated fashion against
Israel. This, he said, was due
both to the Israel-Egypt peace
treaty, and to the Iraq-Iran war.
"I shall not shed a tear if the
tension between those two coun-
tries continues for years,
because that would mean quiet
in the eastern front," said
Rabin. He said that such a quiet
was significant, since the Iraqi
army numbers some one million
soldiers.
In any case, said Rabin, Israel
would win any war which could
break out now. However, where-
as the Arabs are gaining in
military strength, he said, the
resources at the disposal of the
defense establishment are now
$650 million less than they had
been 10 years ago.
