ONE OF THE MOST impor-
tant elements of a Mardi Gras
festival in good food and there is
expected to be much of that dur-
ing Mardi Gras at Jack McCar-
thy's Restaurant on Cass Lake
Road, Keego Harbor, this Tues-
day.
Jack, who was born in New
Iberia, Louisiana, is completing
plans for a multi-course dinner
to be held on the traditional eve
of Lent ... "In New Orleans,"
he says, "Mardi Gras parties can
be held days or even weeks be-
fore the actual Mardi Gras or
'Fat Tuesday.' " ' -
Jack McCarthy's Restaurant
has been the scene of other spe-
cial dinners, mostly featuring
Cajun food ... There will be a
strong Cajun influence Tuesday,
plus a flavor of old New Orleans
... "The menu hasn't exactly
been set," says the popular TV
reporter and restuarant owner,
"because we will have to wait
and see what fresh seafood will
be available this week from my
New Orleans supplier. We can
be pretty certain though that
crawfish, redfish, shrimp and
oysters will be very much in
evidence."
Jack's dining spot serves what
is probably among the most au-
thentic Cajun food in this area
... Jack, _his chef, Gordon Bow-
man, and Sous Chef Stephan
Townes, have all trained under
Cajun homemakers, using re-
cipes which have been handed
down for generations ... There
will be two seatings for the $30
per person dinner, 6:30 and 8
p.m. ... Reservations are re-
quired.
