large chicken soup cubes,
crushed)
pound boned and skinned
chicken breast meat, cut
into 1-inch cubes (from
about 4 medium-sized
breast halves)
cup mixed whole dried
fruits, such as pitted
prunes, pitted dates, ap-
ricots, brown figs (stems
removed)
cup dark or light raisins
cup slivered blanched al-
monds
tsp. ground allspice
4 tsp. ground cinnamon
to % tsp. ground black
pepper
In a 3- to 4-quart saucepan or
utch oven, over medium-high
eat, heat the oil; then saute
he onion and celery until they
re tender but not browned. Add
he rice, and cook, stirring for 2
mutes longer. Then add the
emaining ingredients, and stir
well so they are evenly distrib-
uted.
Bring to a boil; then reduce
the heat, and simmer the pilaf,
covered and undisturbed, for 35
to 45 minutes or until the liquid
is absorbed and the chicken and
rice are tender. Gently toss with
a fork before serving.

DATE-NUT MUFFINS

% cup boiling water
1 tsp. baking soda
2 tbsps. butter or margarine,
softened and cut in small
pieces
3/4 cup chopped, pitted dates
2 large eggs, lightly beaten
1/2 cup sugar
1 tsp. vanilla extract
'/a tsp. ground cinnamon
1/2 cup chopped walnuts or
pecans
% cup all-purpose white flour
1/2 cup whole wheat flour
tsp. baking powder
Put the boiling water into a
medium-sized mixing bowl, and
acid the baking soda. When it
stops bubbling stir in the butter
and the dates. Stir gently until
the butter melts and the mix-
ture cools to lukewarm. Mix in
the eggs, sugar, vanilla extract
and cinnamon until well com-
bined; then stir in the nuts. Add
the white flour, whole wheat
flour and baking powder, and
stir just until, completely mois-
tened; do not overmix;
Spoon the batter into 12
nonstick spray-coated, paper-
lined, or greased muffin cups.
Bake in a preheated 325-degree
oven for 25 to 30 minutes or
until a toothpick inserted in a
muffin comes out clean. Let the
muffins cool in the pan on a
rack for 5 minutes.
To loosen them from the pan
(if paper liners were not used),
rap each edge of the muffin pan-
against the countertop.
