Ingredients ... Three cups of
shredded cabbage, one teaspoon
salt, one shredded turnip, one
shredded carrot, one chopped
green pepper, one-quarter teas-
poon dill seed ... Cover cabbage
with salt and let stand for 45
minutes, then wash and dry
thoroughly ... Drain cabbage
and squeeze water out by hand
... Toss other ingredients in a
bowl with the cabbage and
moisten by a little low-cal dres-
sing.
Skinny Jelly ... Makings call
for one bottle of fruit-or cola-
flavored low-calorie soft drink,
plus one envelope of unflavored
gelatin ... heat enough of the
soft drink to dissolve all the
gelatin, add a dash of salt and
the rest of the drink ... Chill
mixture, then eat it whenever
you're craving something sweet
. 10 calories per serving and
the only parts of your body that
will fatten up are your hair and
nails.
Here's some canape snacks
with calorie counts that practi-
cally aren't there ... devour all
you want .. Slice, scraped car-
rots into good-sized disks ...
Cover with water and store in
refrigerator for a few hours ...
The disks then are the base for
your canapes ... Top thusly ...
Blend one-half cup cottage
cheese, two teapoons sour
cream, one teaspoon chives and
spread on carrot slices ...
Crown with caviar, caper or rol-
led anchovy.
Fresh Mushrooms ... Slice
and marinate mushrooms in a
little oil ... Add Bleed pimentos,
onion and chopped green pepper,
plus vinegar, salt and garlic to
taste ... Try a plate of these
tangy goodies for four o'clock
starvation.
Green Bean and Carrot Salad
... Cook one pound of fresh
string beans and four carrots
(cut into julienne strips) in', a
small amount of water for a few
minutes ... Don't overcook ...
keep the vegetables crisp ...
Drain and chill after cooking ...
Mix two tablespoons oil and one
tablespoons wine vinegar ...
Slice one-half red onion wafer-
thin ... Toss beans, carrots and
onions in a bowl together with
dressing, plus salt and pepper
. Sprinkle capers on top
makes six servings at 55
calories each.
Cold Cucumber Soup ... Try
this for between-meal joy ...
You'll need three medium-sized
cucumbers, four cups of chicken
bouillon, one cup buttermilk,
two teaspoons fresh cropped dill
and one-eighth teaspoon fresh
pepper ... Peel the cakes, slice
Them in half lengthwise, and
remove all the seeds ... Now
dice cukes and put them in a
saucepan with boiling bouillon
... Cook over low flame for 10
minutes ... Remove vegetable
and puree in a sieve or blender
... Cool, then blend with but-
termilk, dill and pepper ... Sea-
son and serve well-chilled ...
Six servings, 30 calories per
serving.
Cottage Cheese ... Four

ounces of this fluffy delight (100
calories, approximately 15
grams of protein!) midmorning
and midafternoon can stop you
from cheeseburgering and
malted-milking at lunch ....Rev
up the cheese from slivered
onion and diced green pepper
... Lunch might be half an av-
ocado with lemon ... 190
calories.
Washed Fresh Vegetables are
for munching at will ... Caulif-
lower, cucumbers, peppers, car-
rots, radishes, a few olives are a
low-cal and very high in vita-
mins.
Meat ... A plateful of bite-
sized pieces of lean beef, chic-
ken, turkey or veal are splendid
for those occasions when the
carnivore in you comes out ...
All these need is a dash of salt
and pepper.
Finger Pick-Up Foods give in-
stant satisfaction ... cooked
shrimp, drained anchovies, low-
cal cheeses .. Camembert 80
calories per ounce, Edam 25
calories, feta 99.
Those of you on diets take
note that many restaurants now
cater to youx wish for weight

areas set aside to assist you ...
If not, ask your waitperson to
have the chef suggest something
... If he or she are up on their
culinary expertise, they'll be
able to arrive at something that
will soothe your palate ... and
