The New England Journal of
Medicine had just reported three
important research studies
which concluded that eating fish
may truly be beneficial for one's
heart. According to some of the
researchers, "On the basis of the
epidemiologic and experimental
data available, it seems justifi-
able to include a recommenda-
tion of one or two fish dishes a
week in dietary guidelines for
the prevention of coronary heart
disease."
In the largest study, 852
middle-aged Dutch men, who'
had no evidence of heart disease
at the onset of the project, had
their dietary and medical his-
tories followed for 20 years.
Researchers found that men
who ate an average of seven
ounces of fish per week had half
the mortality rate from heart
disease as those who ate little or
no fish.
Furtherneore, they determined
that the more fish eaten, the
less chance for heart disease.
This was independent of other
factors — such as age, blood
pressure, and blood cholesterol
— which may affect a person's
risk for heart disease.
Another study reported in the
same issue of the New England
Journal showed that patients on
a four-week diet high in salmon
oil had greatly reduced blood
levels of triglycerides and
cholesterol.
Unexpectedly, fatty fish (such
as salmon, herring, end tuna)
proved to bejust as effective as
lean fish (such as cod sad flow
der) in ouch study, The studies

TANGY FISH BARBECUE
1% pounds fish steaks or thick
fillets
% cup catsup
% cup cooking oil
3 tbsps. vinegar
3 tbsps. lemon juice
1 tsp. Worchester shire
1 tsp. salt
% tsp. grated onion
% tsp. dry mustard
% tsp. paprika
1 clove garlic, finely chopped
3 drops liquid hot pepper sauce
Thaw fish if frozen. Cut fish
into serving-sized portions.
Place fish in a single layer in
baking pan, approximately 12 x
8 x 2 inches. Combine remain•
ing ingredients, Pour sauce over
fish and marinate for 30 min-
utes, turning once. Remove fish,
reserving sauce for basting.
Place fish in well-greased,
hinged wire grills. Cook about 4
inches from moderately hot
coals for 8 minutes. Baste with
sauce. Turn and cook 7 to 10
minutes longer or until fish
with a fork.
