. . . the initial experience at an
elsewhere restaurant, was disap-
pointing . . . This time we were
served a beautiful fresh piece of
blackened white fish with cajun
pepper that defies the imagina-
tion with its deliciousness.
No odor, no bones . . . perfectly
seasoned (it's prepared as you
like Cajun: light, medium or
heavy . . . Some people just pre-
pared their fresh white fish sim-
ply broiled, also.) . . . very tender
yet enough consistency to pick up
without coming apart . . . The
freshness of Dan Lowry's fish is
highly apparent . . . and most cer-
tainly . . . without any doubt
whatsoever . . . would belie what-
ever thoughts that may be to the
contrary . . . as is the case in
many restaurants.
Blackened white fish is pan-
fried with Cajun spices (like I
said, as you desire) in a cast iron
pan on stove top . . . The blac-
kened effect is gotten by pans
being so hot . . . They are placed
empty on fires at 4:30 p.m. and
left there . . . The slightest piece
of paper, for instance, thrown in
the pan will burn up immediately
. . . This is why, when the fresh
white fish is put in after being
sprinkled with Cajun pepper, it
naturally creates a smoke effect
that could be more apparent
when four or five are being made
at the same time . . . The resul-
tive cause has been somewhat
alleviated by the addition of a
window fan to go along with
range fans.

lightful flavor all its own.

its own Apple Beignet dessert .. .
peeled and sliced apple dipped in
a French batter (eggs, milk, van-
illa, etc.) and dropped into a fryer
. . . then served warm with
homemade cinnamon ice cream
