WHEN A NEW restaurant
opens, criticisms galore abound
thinking . . . It is absolutely im-
possible for a restaurant to re-
.. good and bad ... Unfavora-
ble remarks about a new place
are really not fair ... Judge-
ments should be based only on
second and third visits ... or
after the so-called "bugs" have
been removed ... In many
cases, there are a lot and it
takes a while longer to settle
things into a well-working oper-
ation ... Some are never able to
get them out ... and thusly go
down the well-known tube.
New restaurants must be
given a chance ... If it has the
proper makings, food and serv-
ice will win out for a successful
endeavor ... This combination
should take a month minimum
... In many instances even less.
To say that a restaurant
shouldn't open until it has ev-
erything down perfect is foolish
ctify its mistakes unless opening
to make them ... Poor criticism
is easy when looking for all-
around goodness— . .. Perfection?
Forget it! ... The greatest res-
taurants and the saddest restau-
rants have their good and bad
... Not giving a new one its just
chance is totally unfair ... bad
experiences on first-time visit of
a very new restaurant should
not keep away the fair-minded
... A second chance is definitely
deserved.Most leading re-
staurateurs in the world concur
on this ... Opening a new res-
taurant can be a nightmare ...

staurateur since 1917 on
Farnsworth and Hastings before
opening Darbys, which took a
while to get untracked ... Can
anyone be more successful than
Carl Rosenfeld of Carl's Chop
House? ... He left a tire busi-
ness to go into the restaurant
game with a "friend" from
Cleveland and called it the
Grand River Chop House ..
There was total bedlam and the
Clevelander snuck out leaving
Carl holding the bag ... which
became a very successful
endeavor indeed ... The list
could go on and on ... seem-
ingly endlessly ... and the bot-
tom line is always there ... give
the restaurant a second or third
chance ... It may have changed
much for the better since the
first time.
Such a turnabout has begun
to happen at Bloomie's, former
site of Bloomfield Canopy, Or-
chard Lake Rd. and Maple,
which was opened May 20 with
beautiful decor that included
wall graphics by Jeff Scissors
... Only things still in the
South Room from former BC are
shade fixtures over the booths
and tables ... and the booth
structures ... They have been
re-covered and predominant
colors throughout the room are
of beiges and browns, with la-
vender touches.
The South Room (to left as
you enter) has been completely
refurbished ... new tabletops,
new carpeting, brighter colors
... The North Room (to right
when entering) has added a
brass wine rack ... and lounge
area ... all seats at the bar are
changed ... and the firepace
streamlined.
Former Bloomfield Canopy
foyer was completely gutted ...
and a new bright entrance with
Scissors graphics now has taken
its place ... Same for the large
kitchen, which was also com-
pletely gutted ... and an
entirely new one built in its
stead ... where Chef Ira Siegel
with his staff do their own bak-
ing ... and cook without use of
chemicals ... no monosodium
glutamate ... no chicken or beef
bases ... everything natural ...
the dishes and flatware are also
all new.
People who encountered un-
fortunate circumstances the first
time will discover a change for
the better ... Even the menu is
being (or already has been)
changed ... Marvin Siegel, who
operates Bloomie's, admits they
are still getting the kinks out
but that patience will be re-
warded ... as the restaurant
constantly strives to upgrade it
operation ... Inside of three_
weeks from opening, he broomed
out one-half the staff of waitres-
ses and cooks at Bloomie's.
Marvin was caterer at Cong.
Shaarey Zedek 10 years ... but
is loaded with restaurant ex-
perience ... He had his own
dining spot 12 years in New
York City ... operated two
Holiday Inn restaurants at
Kennedy Airport ... and one on
Staten Island ... Marvin taught
restaurant and hotel manage-
