IN THE
Chicken Israeli-Style

In Israel, poultry and fruit are
plentiful, and they are often
cooked together in a wide varie-
ty of dishes. The following one
includes two Israeli favorites —
tangerine and avocado — that
are frequently used in unex-
pectedly delicious ways. With
the color contrast of orange and
green, this dish looks as great as
it tastes.
• 2 to 3 tablespoons pareve
margarine
• About 5 to 6 skinned and
boned chicken breast halves (cut in-
to large cubes, if desired)
• 4 teaspoons cornstarch
• 11/2 cups tangerine juice (made -
from frozen tangerine juice concen-
trate, if desired) (or substitute orange
juice)
• 1/4 teaspoon allspice
• 'Is teaspoon cinnamon
• I/8 teaspoon black pepper, preferably
freshly ground
• Pinch of salt
• 1 medium-sized to large,
ripe avocado
• 1 cup tangerine sections,
seeds and fibers removed (from
about 3 tangerines) (or 1 101/2-
ounce can mandarin orange seg-
ments, drained)
To Serve (optional):
• Hot, cooked, white or
brown rice
In a large skillet over medium-
high heat, melt margarine; then
brown chicken on all sides.
Meanwhile, in a small bowl, mix
cornstarch with a small amount
of tangerine juice to make a
paste; then add remaining tan-
gerine juice, allspice, cinnamon,
pepper, and salt. Add juice mix-
ture to skillet, and continue
cooking until sauce thickens and
just comes to a boil. Cover
skillet tightly, and reduce heat.
Simmer chicken, basting often,
for about 30 to 45 minutes or un-
til very tender (cubes will take
less time than uncut breast
halves).
When chicken is almost ten-
der, cut avocado lengthwise in
half, and remove large pit in
center. Peel each avocado half;
then cut it lengthwise into

from discoloring. Drain before
, using.) When chicken is tender,
stir avocado pieces and tan-
gerine sections into the sauce.
Raise heat, and simmer mixture
about 2 minutes longer or until
fruits are heated through. If
desired, serve over a bed of rice.
Makes about 5 servings.
