done by a rolling machine .. .
They are not made to be frozen
since each is fre•hly prepared
while people wait.
"FOR YEARS," writes Trish
Hall, staff reporter for Wall Street
Journal in April 10 article, "the
Coach House Restaurant was
awarded four stars - the highest
rating - by the New York Times'
food critic." . . . "Then one Friday
early last year," she says, "the
paper published a scathing review
that found a fault with nearly
every aspect of the restaurant,
from stale butter and erratic serv-
ice to the legendary black-bean
soup 'served without a hint of
Madeira.' "
The restaurant's owner of 35
years, reports Trish, had 186
reservations for that night and
only 80 showed up . . . not even
bothering to call . . . Patronage
through following weeks fell
about 50 percent, owner told
Trish, costing him $300,000 in
revenue . . . She writes of his say-
ing business has bounced back,
but that "he believes the review
was innacurate and he is upset
about the power of food critics" .. .
As Trish writes, the owner stated,
"If the people follow and believe
what they read, we are in trouble.
Is the food critic more important
than the chef? More important
than the owner? The answer, be-
cause of the mentality of people, is
yes."
"New York's biggest paper, The
Daily News, is thinking of ex-
panding its restaurant coverage
soon because of reader interest,"
writes Trish . . . "The paper will
stick to food writers though. Its
food editor told her he recently
had to give up on a three-month
experiment called "Real People
Eat Out" in which non-
professionals wrote reviews .. .
"Everybody became Hitler when
they got the pen in hand," he says.

IN THEATER TALK, noises
off refers to the commotion in
wings . . . This is title of Michael
Frayn's play at Fisher Theater,
W. Grand Blvd. opening April 30
through June 2 . . . Noises Off...
but pertains to backstage yelps
and battle cries of the actors who
are entangled in problems of their
own . . . Idea for play came to
Frayn one night in '70s when he
stood in the wings of a London
theater watching a quick-change,
arms-flapping performance of a
farce he had written for Lynn
Redgrave.

Play Staged

Shakespeare's The Taming of
the Shrew, the current production
of the Actors Alliance Theater
Company, will run weekends
through May 12.
