1 /4 cup cocoa*
1 tsp. grated lemon rind
1 drop aromatic bitters
Freshly brewed Sanka°

To prepare base, combine
sugar, cocoa, lemon rind and bit-
ters; mix well. Store in re-
frigerator in jar with tight-fitting
cover. Makes 1/2 cup, or enough for
16 servings.
For each serving, place 1 1
teaspoons base in coffee cup. Stir
in coffee andf 2 teaspoons liqueur.
Sweeten, if desired, and garnish
with whipped topping.

STEAMED PRUNE
AND APRICOT PUDDING
WITH CUSTARD SAUCE
% cup chopped Sun-Maid Ap-
ricots
1 cup Sunsweet Diced Prunes
1 tsp. grated orange rind
1 /4 cup all-purpose flour
1/2 cup orange juice
1 /4 cup butter or margarine
1 /4 cup molasses
1 1/4 cups all-purpose flour
1 /2 cup packed brown sugar
1 /2 tsp. salt
1 tsp. baking powder
1 /2 tsp. baking soda
1 egg, beaten
1 tsp. vanilla
Combine apricots, diced prunes,
orange rind and 14 cup flour in
bowl. Set aside. In saucepan com-
bine orange juice, butter and
molasses. Place over low heat
until butter melts. Remove from
heat and set aside. In large mix-

ing bowl stir together flour, brown
sugar, salt, baking powder and
baking soda. Add melted butter
mixture, egg and vanilla to dry
ingredients. Stir just until mois-
tened. Stir in apricot-prime mix-
ture. Pour into a well-greased and
sugared 6-cup mold. If you don't
have a mold especially for steam-
ing, a glass or ceramic bowl may
be used.
Cover tightly with several
layers of foil. Secure with string.
Place mold in large saucepan or
Dutch oven in 1-inch of gently
simmering water. Cover sauce-
pan. Steam for about 1 hour and
10 minutes (for mold with center-
tube), or 2 1/2 to 3 hours (for mold
without center-tube), or until
toothpick inserted in center comes
out dry. Uncover mold and allow
to cool for 15 minutes before un-
molding. Pudding may be served
warm or at room temperature
with warm custard sauce.

To preserve pudding for later
use, recover with fresh foil and re-
frigerate for up to 2 weeks. For
extra flavor, sprinkle warm pud-
ding with tablespoons of brandy
before refrigerating. To reheat
pudding, steam in mold, as before,
for about 20 minutes. Makes 6
servings.

CUSTARD SAUCE
3 tbsps. butter or margarine
1 /2 cup powdered sugar
3 egg yolks
% cup milk
2 tsps. vanilla
Melt butter in saucepan over
low heat. Stir in powdered sugar
until smooth. With wire whisk,
beat in egg yolks and milk. Cook,
while whisking constantly, over
medium-high heat, until mixture
begins to bubble and thicken,
about 5 minutes. Remove from
heat and stir in vanilla. If not
using sauce immediately, cover
top with plastic wrap or a lid to
prevent film from forming.
