BAKLAVA
1 lb. unsalted butter or mar-
garine
11/2 cups light vegetable oil
48 sheets filo dough (about 2
pounds), fresh or frozen. If
frozen, defrost in re-
frigerator for 1 to 2 days
and bring to room tem-
perature before opening
package.

Syrup
3 cups sugar
11/2 cups water
Juice of 2 to 3 oranges
Juice of 1 lemon
3 /4 tsp. cinnamon
3 /4 tsp. cardamon (optional)
Make syrup: Bring sugar,
water, orange juice, and lemon
juice to a boil in a deep saucepan.
Cook over low to medium heat
until the syrup is thickened and
clear, about 30 minutes. Remove
from heat and stir in the spices.
Refrigerate for 12 to 24 hours for
best results.
Melt butter and oil in saucepan.
Combine ingredients for selected
filling. Use a pastry brush to
generously grease the bottom and
sides of a 10x14x2 baking pan (the
pan may be larger so long as it is
no larger than the filo sheets; you
may have to fold ends of sheets to
fit the pan).
Place 12 sheets of filo in the bot-
tom of the pan, brushing some
butter/oil over each layer. Spread
with one-third of the filling. Re-
peat (12 sheets filo, butter/
oil,one-third filling). Repeat
again, ending with a layer of 12
sheets filo and butter/oil. Cut the
last sheet of filo dough to fit the
pan and brush the top with the
butter/oil mixture. Place pan in
freezer for 30 minutes.
Using a very sharp knife, cut
the baklava lengthwise into 5 or 6
rows of equal width. Then cut
diagonally through the rows to
form the traditional diamond
shapes.
Preheat the oven to 400 de-
grees. Bake 15 minutes at 400 de-
grees, 15 minutes at 350 degrees,
and 1 hour at 300 degrees. Pour
cold syrup over the hot baklava.
Allow to cool to room temperature
and recut the diamonds. Remove
to individual fluted paper cups.
Makes approximately 36
diamond-shaped pieces.

1 lb. ground walnuts or al-
monds (or combination)
1 tbsp. cinnamon
cup sugar

Filling 2
2 lbs. ground unsalted pis-
tachio nuts
1 tbsp. cinnamon
1 1/4 cup sugar
(1 1/2 tsp. rosewater added to
cold syrup)

Filling 3
1 cup ground almonds
1 cup ground walnuts
1 cup ground hazelnuts
1 /2•cup poppy seeds
Y2 cup sesame seeds (hulled)
2 tsps. cinnamon
% tsp. cardamon
% cup sugar
(1 tbsp. orange blossom water
added cold to syrup)
