Tastes of Israel

Jerusalem — Israel's melting
pot complexion is reflected not
only in its multi-ethnic popula-
tion, but in the varied back-
grounds of the country's cooking
methods, eating styles and dishes
from all over the world offered in
its restaurants, cafes, eateries,
snack bars, kiosks and by street
vendors. •
Although all meat is ritually
slaughtered and hotels in Israel
are kosher, one must still look for
the rabbinical certificate to indi-
cate a particular restaurant is
kosher. As elsewhere the health
kick has hit Israel and a plethora
of vegetarian and dairy restau-
rants about to prove it. Pizza, fel-
lafel, borekas and blintze bars
greet you everywhere and you can
enjoy them at very low prices.
Some of the popular restau-
rants specialize in fish dishes
only, or have a widely varied
menu from which you may choose
something a la. carte. In
Jerusalem, fish-eaters have Be-
ni's, in the center of town, Savion,
across the road from Terra
Sancta, or the Dolphin, a particu-
larly popular and reasonable res-
taurant in the Arab neighborhood
of East Jerusalem. Vegetarians
prefer Bavli on the Street of the
Prophets, the Alpin on King
George Street and Tavlin on Riv-
lin Street, as well as numerous
blintze restaurants.
For traditionalists, the Down-
town offers a full selection of
sandwiches, soups, crepes and
dessert, reasonably priced.
Nearby on Hillel Street is the
civilized L'Entrecote, serving a
standard steak meal, and Deli
Nepi, a kosher deli near Zion
Square, offers- American-style
cornbeef.

In costomopolitan Tel Aviv,
eateries and restaurants, or stand
up bars are packed into every
corner of the sprawling city. Di-
zengoff, the main thoroughfare, is
a veritable gourmand's delight
from one end to the other. Batya's
in the center of Arlosoroff St. has
probably the most economical, de-
licious, East European fare, rea-
sonable • priced with cholent and
kishke available on weekends,
and chopped liver daily. On Ben
Gurion Street, an entire corner Is
occupied by the New York, prob-
ably the best known kosher res-
taurant in the city, which now has
added an adjoining dairy eating
place.
For elegant, western style din-
ing there is the old world charm of
the Rishon Cellar, probably more
expensive, but worth a trip, and
the high class hotels all along
Hayarkon Street, from the Dan
Hotel onward. The Hilton prob-
ably incorporates the greatest
variety of dining areas, topped by
their King Solomon Grill.
And you can have an entire
meal on the street: corn on the cob,
fellafel, nuts, borekas, sumsum
(sesame) bread, bagels and sea-
sonal treats like Sabra fruit and
roasted chestnuts from kiosks or
street vendors — all inexpensive.
Most Israelis live neither in
Jerusalem,nor in Tel Aviv and in
smaller towns, on the highways in
gas stations, and in kibbutz re-
sthouses, one can enjoy facilities
