5 to 6 lbs. Empire turkey
thighs, thawed
% cup margarine
1 medium-sized onion,
chopped
% lb. mushrooms, sliced
2 cups long grain rice,
uncooked
1 can UO condensed
chicken broth, undi-
luted
1 % tsp. thyme
1 tsp. salt
% tsp. pepper
% cup kosher dry white
wine

350 degrees.. For glaze,
brush top of the turkey
thighs with apricot jam and
baste frequently during the
last 30 minutes. Mean-
while, place the apricots,
water, brown sugar and
lemon juice in a small
saucepan and simmer for
five minutes. Drain, reserv-
ing the liquid. Add water to
liquid to . make one cup.
Place in a large saucepan
with margarine and heat
until margarine is melted.
Stir in bread cubes, almonds
and salt. Cut apricots in
strips and add to mixture.
Place in a 1-quart baking
dish and bake alongside
turkey thigh for the last 25
minutes. To serve, make a
bed of dressing on a hot plat-
ter and place turkey thighs
on top.

SPICY TURKEY
PATTY SANDWICHES
1 sound Empire Ground
Turkey Meat
1 egg
3 /4 tsp. gm , - d sage
1/2 tsp. rosemary leaves,
crushed
1/2 tsp. ground black pep-
per
% tsp. marjoram
Preheat oven to 350 de-
% tsp. leaf thyme,
grees. Saute mushrooms
crushed

Combine all ingredients
and mix thoroughly. Shape
into four patties. Chill one
hour. Bake or fry. Serve on
toasted rolls with lettuce
and tomato slices.

TURKEY CHILI
1/2 lb. Empire Ground
Turkey Meat
2 peeled, chopped onions
1 seeded, chopped green
bell pepper
1 clove garlic, minced
1 16-oz. can tomatoes
3 cups canned, drained
UO kidney beans
2 tsps. chili powder (or
more to taste)
1 tsp. cumin seeds (op-
tional)
salt to taste

Brown ground turkey in a
nonstick skillet with no fat
added. Stir in all remaining
ingredients-. Cover and
simmer 25 minutes. Un-
cover and continue cooking
until thickened.

stiring, until rice is lightly
browned. Stir in chicken
broth, thyme, salt, pepper,
wine and cup water. Place
turkey thighs in deep
4-quart casserole. Pour rice
mixture around turkey
thighs. Cover tightly and
bake two hours or until
internal temperature
reaches 180 degrees. Let
stand 15 minutes before
serving.

THIGHS
Empire Turkey Thighs (5
to 6 pounds)
UO apricot jam
1 cup dried apricots
1 cup water
1 tbsp. brown sugar
1 tbsp. lemon juice
% cup margarine
1 package (8 oz.) sea-
soned bread cubes
% cup slivered almonds
% tsp. salt
