It took him 500 telexes and 20 tele- grams to track down a suit- able Japanese chef for the restaurant. Shigeru Akashi, the Teppanyaki chef, was working as a chef in the Serena restaurant in Tokyo. He was interviewed in Japan by the Israel cul- tural attache. "He's a great chef, but he doesn't speak English, or of course, Hebrew," sais Mas- inter, who had the job of ex- plaining glatt kashrut to the new chef. "He knows that kashrut is a dietary code and is aware of the rules. He's doing very well." Nevertheless, the bearded maschgiach, a kosher inspector, stands by to make sure chef Akashi maintains the strictest kas- hrut. "Cooking kosher food Japanese style is really not a problem," said Masinter. "We don't attempt to im- itate shrimp or pork recipes, but make use of beef, veal and poultry."
