The woman in the flowered kimono is wearing, well, -- sheitel, and the whi fringes of her husband's ritual garment peak out of the black "happy coat" each time he reaches forward with his chopsticks to dip his food in hot sauce. No, this is no ordinary Japanese restaurant. We are in the world's first glatt kosher Japanese restau- rant, located appropriately in what its owners claim is Israel's first glatt kosher luxury hotel, the King Sol- omon Sheraton in Jerusalem. "The great majority of our customers are. Orthodox," said Mike Masinter, South African-born and trained food and beverage manager. What seems incongruous is that we are not talking about a ma and pa guest house in Natanya or the Catskills, but an aristocra- tic Sheraton Hotel. Rooms can easily cost $100 with breakfast, a meal at which, as the proprietors tell us, 17 pieces of fine china and cut- lery are used for each ele- gant place setting. Yet from the cafe in the lower lobby to the 14th floor bar with its breathtaking view of the Old City, the strictest kas- hrut restrictions are ob- served. Glatt kosher means that even more rigorous than regular kashrut standards of inspection are applied to meat. The Sheraton only_ purchases meat slaughtered fresh in Jerusalem, in contrast to most kosher restaurants, which also use kosher meat brought frozen from abroad. Although the term glatt ac- tually refers only to the meat, those electing glatt kosher meat often have similarly exacting standards for other products as well. "We always go by the strictest kashrut certificate we can get, those approved by the Jerusalem rabbi- nate," said Masinter. "We buy baked goods from three bakeries that use no mil' products whatsoever, are... check auxiliary products very carefully. It took us a long time, for instance, to find a soy sauce made loc- ally that met both our kas- hrut and culinary standards." "Going completely glatt was largely an economic is- sue," said Masinter.
