Kosher Wok-ing . . . Stir
Fry Sliced Fish . . . 1 1/4 lbs.
fish, 1/2 can bamboo shoots,
sliced, 3 dried black mush-
rooms, soaked in water; cut
in pieces, 1/2 lb. green veget-
able, 4 scallions in 1" pieces,
15 slices ginger, 1 egg
white, 1/2 tsp. salt, 1/2 tsp.
sugar, 1/2 tbsp. wine, 2 tbsp.
stock or mushroom water, 1
tsp. soy, 1 tsp. cornstarch, 1
tsp. sesame oil, 3 cups oil ...
Cut fish in pieces 1x1 1/2".
Soak in egg white mixture,
about 1/2 hour. Stir fry veg-
etables in 2 tbsp. oil, season
with 1 tsp. wine, 1 tsp. salt,
1 tsp. sugar. Mix well, lay on
platter. Heat oil, fry all fish
about 10 seconds. Remove
fish and drain oil from wok.
In 2 tbsp. oil, stir fry green
onion and ginger; add
mushrooms and bamboo
shoots. Stir fry a few sec-
onds, add fish and seasoning
sauce. Stir until mixed,
thick.
