This is done by forcing
nitrogen into the open
bottle of wine . . . removing
all air . . . Without air in the
bottle, there is no oxidation
. . . A fine vintage wine can
be opened up . . . with ji.3- 4•
one glass from it sold
and the remaining contents
stay fresh as for as long as
six months . . . Incredible!
Beneath the bar, a tank of
nitrogen with plastic pipe
runs to each open bottle of
wine . . . and its patented
stoppers . . . The bottles of
wine are then connected to
their own private faucet.
Chilled wines are dis-
played in a glass refriger-
ated display case.
The wine glasses are par-
ticularly beautiful and
serve intended purposes . . .
All are wide-mouthed to
allow for swirling and snift-
ing (wine people call it nos-
ing).
Also served are 20 im-
ported beers from around
the world . . . some not
found in too many restau-
rants.
And to think . . . this is
the same Benjie Pearlman
who was a dance teacher in
the 1950s . . . with his Be-
njie Palmer Dance School
. . . From dance teacher to
culinary expert is quite a
long jump . . . but they have
one thing in common .. .
both are fun . . . especially
when dining at Benjie's.
Oh, yes . . . one more
thing . . . no reason for
people to call and tell me
they can't find the place .. .
Benjie's now has an awning
outside.
And still another feature
has been added to Benjie's

seafood brunch every Sun-

Benjie Pearlman has
made a worthy name for
himself in the culinary
