term which indicates that
the grain from which this
kind of matzah is made has
been watched and super-
vised from the very time the
wheat was harvested to
make sure that no fermen-
tation had taken place with
this grain.

ground. Some people eat
only shmurah matzah for
the entire Passover holiday.
Others, who are not that
strict, eat shmurah matzah
only at the Seder. Less ob-
servant Jews will eat mat-
zah that has been super-
vised only from the time of
the grinding at any time
during Passover.

amount of fermentation can
make the matzah unfit for
use on Passover, there are
those who insist that the
wheat be supervised from
the time of its harvest.
