rians has published a sam-
pling of low-cholesterol re-
cipes for Passover. Featured
are over 40 eggless dishes, a
description of veg-
etarianism and information
on a vegetarian Seder plate.

STUFFED CABBAGE
Small head of cabbage
4 tsps. margarine or oil
2 small onions, minced
1 1/2 cups matza farfel or 4
pieces of matza, crushed
1 cup raisins
2 stalks celery, chopped finely
2 tbsps. red dry wine
2 /3 cup apple juice
1 /2 cup apple sauce
29 oz. can of tomato sauce
1 cup water
Steam head of cabbage till
leaves are soft. In margarine
saute onions, farfel, raisins
and celery for 10 minutes. Add
wine, juice and apple sauce.
Simmer 5 more minutes. Stuff
cabbage leaves with mixture.
Lay in deep baking dish. Mix
tomato sauce with water. Pour
sauce over cabbage so that
the leaves don't dry out while
baking. Bake at 375 degrees
for half hour or until heated
through.

SWEET POTATOES
AND APPLES
Slice 4 sweet potatoes and
place them in a baking dish,
alternating with slices of 4
apples and scattering with
raisins as you go. Sprinkle
with lemon juice, dot with
margarine, and dust with cin-
namon. Cover and bake at 350
degrees for about an hour.
Variation: Add chopped
nuts.
