Shapiro, the hospital's executive vice president. Before coming to Sinai, Schuhardt was associate executive director of policy and planning for the Greater Detroit Area Health Council, Inc. Before that, he was assistant ad- ministrator at Garden City Osteopathic Hospital. With Passover rapidly approaching, here's a sample of a Passover recipe from the book. 4-5 apples, peeled, cored and sliced BATTER: 3 eggs 1 /4 cup white wine 3 tbsps. sugar pinch of salt 1/2 cup water 2 cup matza meal In a bowl, beat eggs with a fork. Add wine, water, sugar, wait and matza meal. Mix until a smooth batter forms. Dip apple slices and fry in oil until nicely browned. Serve with sugar and cinnamon and wine sauce. WINE SAUCE: 2 cups sweet red wine 3 tbsp. sugar 1 tbsp. potato starch Put into a small pot. Mix in- gredients together and bring to boil.
