1 cup barley
2 large onions, diced
1/2 lb. fresh mushrooms, thinly
sliced
2 carrots, diced
2 stalks celery, diced
1-2 tsps. oil
pepper to taste
3 sprigs of fresh dill
Add beef and salt to water
and bring to a boil. Brown veg-
etables lightly in oil in a small
frying pan. Add vegetables,
barley and pepper to soup.
Cover and simmer for 2Y2
hours or until meat is tender.
Add fresh dill and simmer 10
minutes. Add more salt and
pepper to taste. Can be frozen.
Add a little water when reheat-
ing.
