No such thing as MSG (monosodium glutomate) in its food . . . no dye to color foods, no chemicals . . . and discovering that lard is not good for one's health, only vegetable oil for cooking. Even the egg roll at North China is different . . . Many Oriental restaurants stuff packaged casings with ev- erything . . . including chopped up chicken skin with its fat and high choles- terol content says Nelson . . . North China makes its own casing for egg rolls .. . deep fries it in shortening, not lard . . . and does its own stuffing. When North China first opened a short while ago, everything on the menu was a la carte ... Now, however, meals (except chop suey, chow mein or fried rice) all include soup, egg roll, steamed rice, fortune cookies and tea. Another feature people will like . . . prices have been lowered on almost every dish . . . without cut- ting corners . . . no reducing of quality or quantity of food. The emphasis at North China is strictly on authen- tic Oriental dining, not Chinese-American which, Nelson says, is modified to suit American tastes .. . This is a factor important to those who know Far East- ern food . . . which at North China is considered among the finest because of its nu- tritional features and strict authenticity. Most of the ingredients used at North China are imported from China .. . bamboo shoots, straw mushrooms, wood ear mushrooms, baby corn, water chestnuts, oolong tea, etc. The authentic Chinese dishes include six lamb choices . . . Hunan, Szec- huan, Peking, Kung-Pao (with peanuts and bam- boo shoots), spicy Mon- golian and sliced lamb with hot barbecue sauce. Also four duck dishes .. . including the very rare tea smoked duck . . . marinated in a sauce overnight, steamed and then smoked with tea leaves . . . All duck dishes are large servings. Big thing now at North China is the Peking Duck . . . not too many places, if any, serving it for just $19.95 . . . So much is sold that it is prepared everyday . . . no 24-hour wait .. . ready within 15 minutes .. . crispy, deboned, sliced and served with six very thin steamed Mandarin pan- cakes, green onions and sauce. Among the 20 seafood items is another very popu- lar dish not served at too many places . . . Yu-Shun Shrimp with water chestnuts, garlic sauce and wood ear mushrooms. You must remember that Chef Xa'n" is an award- winning Oriental culinary artist . . . capable of prepar- ing foods people have never tasted before . . . In some in- stances, this may account for folks who've eaten at North China remarking about the difference. Don't look for atmos- phere at the former Tun- nel Bar-B-Q and Hickory Bar-B-Q site . . . Oriental chandeliers and wall hangings give it all the look that is needed .. . What's most important here is the food . . . and of this there can be no ques- tion . . . if authenticity is desired ... Seating is for about 180 in booths and at tables . . . including a banquet room for 60 when needed. The combination of an ex- cellent chef . . . and graduate nutritionist at a restaurant is most unusual . . . but so very good to know . . :North China is a rarity. PEOPLE WHO re- member Raleigh House and the wonderful affairs held there would have a lot to talk about with Barry Law- ton . . . He was Sammy Lieberman's right-hand man for 10 years . . . when the place was really going strong . . . as people went from party to party . . . in the same building . . . in- vited or not . . . Raleigh House in itself was one big shindig with as many as six at one time going on.
