Jefferson wouldn't have been the same without a touch of the late Sammy Lieberman, who used to be the gent cal- led upon for such occasions. The flaming flare wasn't there, but wherever he is, Sammy saw more than ample representation .. . and if he had to say so him- self, couldn't have done bet- ter. Mark Stein, Sammy's former partner, was there with the Mark of Excellence catering owned by him and Frank Winton . . . Chef Robert Zimmerman, the other third of this dynamic trio, who are also exclusive caterers at Temple Israel and Temple Beth El, didn't feel well enough to attend . . . but his food sure went over in a big way. Hors d'oeuvres of cold tenderloin roulade and ratatouille tartler were passed . . . then buffet that included gravadlax (smoked salmon) with dill sauce, shrimp pate, sable mousse, civichy (mari, nated scallops) veal loin with sweetbread mousse, sliced breast of duck with green peppercorn sauce, game pates like pheasant in puffed pastry and duck with pistachio nuts. Desserts galore also made by Chef Richard Zimmer- man . . . hazelnut rnerangue tortes, puff pastry filled with butter cream and fresh raspberries swimming in caramel sauce, fruit flans, flourless cake, etc. . . . plus plenty of fruits and im- ported cheeses. Even Sammy's favorite bartenders were there .. . Richard Oliver, 22 years at the Raleigh House . . . Hokie Smith, 23 years .. . and Sam Ward, with Sammy since Linwood days. Mark of Excellence cater- ing carries on what became a tradition of very good food and service. About 200 people vie- wed the beautiful ninth floor models ... over- looking the Detroit River ... and listened to music wherever they went ... piano in the largest apartment shown ... oboe and clarinet trio in the general offices food area. Doug Schubot with his trademark, a diamond bee on a red bowtie . . . Federal Judge Avern Cohn behind one of the bars making his own drink (and not even a member of the union). Joe Nederlander switching pocket hankies with gent who always wears white with his tux . . . Everytime Joe sees him, he switches a red or maroon in its place. There'll be a mini Farmer Jack opened downstairs by Paul Borman . . . Miles Davis taking two of the large apartments . . . with plans to knock down the wall between . . . Gil . Sil- verman always so pleasant . . . Occupancy of Riverfront is expected to begin around Spring of 1984. MAIL DEPT.... Your Clam Shop Friend David Goldfine THE CLAM SHOP owned by Dave on E. Grand Blvd. was another of those little restaurant gems that seemed to abound in De- troit's aging factory and warehouse district. The building was an an- cient structure, originally put up by a well-known brewery way, way back be- fore prohibition . . . In those days, we were told, the bar- tenders and breweries all but dragged the customers in off the street to drink beer for a nickel and partake of the free lunch. The Clam Shop interior was plain and clean and the floor dipped gracefully here and there . . . The kitchen was very likely not as big as the one in your home or apartment, but the seafood that came out of it was thought by some to be the best in Detroit, while others said it was the best in the Midwest. .Proprietor of the Clam Shop with Dave was Frank van Brusselen Dave originally bought the place and Frank joined him in ownership 10 years later ... Neither man had any prior re- staurant experience. As the name implied, the Clam Shop was devoted to those who believed all that is good comes from the sea . . . The menu featured a high concentration of things like clams, oysters, lobsters, king crab and fish, fish, fish. Lobster was king at the Clam Shop . . . and the piece de resistance was the broiled lobster . . . It was 11/4-pound beauty stuffed with a delicious dressing the likes of which we have never tasted again. Oysters in season, and clams were another spe- cialty of the Clam Shop .. Like the lobster, they were flown in every other day from the east and at the arch of an eyebrow, Dave would whip out his weekly price list to show you that they bought nothing but quality regardless of price. Dave and Frank were equally proud of their red snapper, fresh pompano, finan haddie, shad row and king crab.. Friday, October 1, 1983 33 TO ADD AMONG IT'S FINE CARRY-OUT DINING! As a concession to the oc- casional eccentric who came in for a steak, they had ex- cellent New York strips and tenderloins of the highest quality . . . but make no mistake, they were basi- cally a seafood house .. . Their complete dinner .. . and there was no skimping on food . . . prices ranged from about $2 to $5. The Clam Shop was not open on Sunday and served only sandwiches and soup for lunch . . .
