NCJW Offers Holiday Recipes from 'Fiddler in the Kitchen'

"Fiddler in the Kitchen,"
the Greater Detroit Section,
National Council of Jewish
Women's cookbook, pro-
vides a variety of recipes for
holiday cooking.
The 200-page spiral-
bound cookbook contains
recipes, cooking hints and
more. For a copy, call the
NCJW, 557-9604. There is a
charge.
Sample recipes from the
cookbook, selected espe-
cially for holiday meals fol-
low.

Mushroom
Caviar

1 medium onion, minced
2 tbsps. butter
1 /2 pound fresh mushrooms,
finely chopped
2 tbsps. lemon juice
1 tsp. Worcestershire sauce
1 to 2 tbsps. mayonnaise
1/2 tsp. salt
6 to 8 turns freshly ground
pepper
Saute onion in butter until
golden, add mushrooms and
saute for 5 minutes, stirring

lightly to mix well. Add lemon
juice and Worcestershire
sauce, mix well and remove
from stove. Add enough
mayonnaise to blend, salt, and
pepper, and then mound in a
serving dish or store covered
in refrigerator. Chill well and
serve surrounded by Melba
toast or any bland cracker.
Yield: 13/4 cups.

Barley Casserole

1 cup barley
1/2 cup slivered almonds
6 tbsps. pareve margarine, di-
vided
1 medium onion, chopped
1 /2 cup minced parsley
1 /4 cup chopped chives or
green onion
1 /4 tsp. salt
1 /4 tsp. pepper
2 (14-ounce) cans beef or
chicken broth
Rinse barley in cold water
and drain. Toast almonds in 2
tbsps. melted margarine. Re-
move nuts, add remaining
margarine, onion and barley.
Cook until toasted, about 5
minutes. Remove from heat,
stir in all ingredients except

Health Salad

1 1/2 heads cabbage
2 cucumbers, peeled
2 green peppers
2 onions
2 carrots
2 cloves garlic, crushed
1 /4- 1/2 cup sugar or equivalent
sugar substitute
1 cup vinegar
1 cup water
1 /2 cup oil
1 tbsp. salt

Slice all vegetables in food
processor. Combine in large
storage bowl with garlic and
remaining ingredients. Toss
together well. Marinate 24
hours or longer. Yield: 10 serv-
ings. Note: Can be kept in re-
frigerator for 2 weeks.

Fresh Apple Cake

2 cups sugar
11/2 cups oil
3 eggs
3 cups flour
1 tsp. baking soda
1 /2 tsp. salt
1 tsp. cinnamon
1 /2 tsp. coriander*
1 /2 tsp. cardamom*
1 /2 tsp. nutmeg
1/2 tsp. mace
3 cups apples (pared, diced,
sprinkled with lemon juice)
1 cup walnuts, chopped
1 cup white raisins (optional)
2 tsps. vanilla
