Now the question was

whether or not the public
would recognize and
patronize real quality food
in a fast food setting . . .
Miriam asked herself this
as she designed a menu that
called for the kind of food
she, herself, would want .. .
fresh whole breast of tur-
key, not turkey roll, water-
packed white albacore tuna,
herbal teas, Perrier Water,
highest quality fresh veget-
ables, etc.
Miriam insisted that all
food be prepared on prem-
ises each day from "scratch"
. . . No canned, frozen or
pre-prepared soups, sauces
or entrees are used . . . No
microwave cooking is done
. . . and an absolute
minimum of salt, sugar, oils
and fat used in preparation.
In her recipes, Miriam
found that nutritious could
be delicious . . . She re-
tained as her executive chef,
Steve Romanik, a graduate
of Culinary Institute of
America . . former chef at
the Standard Club on
Northwestern, and a found-
ing partner of the Ap-
peteaser restaurant in Mil-
ford.
Steve transformed the
prescribed ingredients
and nutritional
guidelines into a 25-item
menu that is as interest-
ing as it is tempting, and
satisfies a variety of
tastes.
He trains cooks and
monitors quality control in
the kitchen on a continuing
basis, as well as developing
new recipes.
Predominating on the
menu are huge one-pound

homemade toppings rang-
ing from Miss M's Classic
butter, sour cream and
chives to Lo-Cal Veggie,
and Three-Alarm Special
with chili, the Great Gob-
bler with chunks of turkey
breast and mushrooms in
gravy to a Taco Potato.
"Potatoes are high in
potassium, vitamins and
minerals, and not fatten-
ing," says Miriam. "What
you put on them can be,
though."
Her Lo-Cal Veggie
potato fits the Pritikin
Diet perfectly, according
to Miriam, if you leave off
the cheddar cheese and
substitute the Marinara
Sauce ... She offers to
mix and match her top-
pings and sandwich fil-
lings to fit individual di-
ets, if people "will just
ask."
Other items on the menu
include pita bread pocket
sandwiches, pastry baskets
filled with tuna and chicken
salad, homemade soups,
three salads and fresh
bagels . . . A special quiche
is offered every day.
Cream of Broccoli is the
"house" soup . . . delicious
. . . with a good body that
swims with this fresh veg-
etable so nutritious.
"We're not in this for
the short term," says
Miriam. "We knew business
would gradually increase by
word of mouth and return
customers, and it has
worked out that way. People
constantly tell us things
like, 'It's so nice to find
someplace that cooks with-
out a lot of salt and fat,' and
we know they're spreading
the word."
Miriam points out that
salt is an acquired taste,
and can be "kicked" ...
Miss Miriam's at Oakland
Mall gives a freedom of
choice, though, by having
both salt and pepper on
the tables. -
Miriam doesn't hesitate
to teach good nutrition and
cleanliness habits to her
customers every day . . . She
has little chalk boards on
which are written her ad-
monitions . . . be it a diet
hint or a "Please put ciga-
rettes in ash tray" . . . and
sets them around on the
counters.
Miriam is there serving,
teaching and evangelizing
most of the time during
open hours . . . from 10:30
a.m. to 9 p.m. every day ex-
cept Sunday, when the mall
closes at 5 p.m.
Is Miriam satisfied?"
"No, I'll never be satisfied
as long as there is a mall in
this country where people
want to eat quality,
freshly-prepared food and
can't get it," she says with
typical Miriam Kottler de-
termination.
