The cookbook was com- piled under the direction of cookbook chairman Norma Schonwetter, assisted by vice chairmen Mary Schwartz and Phyllis Schwartz. Following are some sam- ple recipes from the Passover section in "Fiddler in the Kitchen": BLACK AND WHITE TORTE RECIPE 8 eggs, separated 1 cup sugar, divided 1 3/4 cups blanched grated 'al- monds 2 tsps. lemon juice 11/2 cups unblanched grated almonds 2 (1 ounce) squares, semis- weet chocolate, melted Rum Beat egg whites until stiff, gradually beat in 1/2 cup sugar until meringue forms stiff peaks. Fold in 13/4 cups blanched almonds and lemon juice. Spread chocolate mixture in bottom. Spread white mix- ture over chocolate. Bake at 325 degrees for 50-60 minutes. Drizzle rum over warm cake. Cool. If desired, frost with Con- fectioner's Glaze, substituting rum flavoring for vanilla. Yield 8-10 servings. Note: Can be used for Passover, omit rum and glaze. * * * VIENNA MOCHA TORTE RECIPE 7 eggs, separated 1 /8 tsp. salt 1 cup sugar 1 tbsp. instant coffee 1 (31/4 ounce) package ground pecans Beat whites with salt until stiff. Add sugar to yolks and beat until thick and lemon colored. Mix instant coffee with nuts. Fold into yolk mix- ture alternately with egg whites. Bake in two greased 8- or 9-inch cake pans with re- movable bottoms (or line with greased waxed paper). Bake at 350 degrees for 20 minutes. Cool slightly, turn out of pans. Frost cooled cake with Mocha Frosting. Decorate with choco- late shavings. Note: Can be used for Passover. MOCHA FROSTING 1/2 pound marshmallows 2 /3 cup strong coffee 1 pint whipping cream beaten stiff Cook marshmallows and strong coffee in double boiler until melted. Chill, then fold in whipped cream. * * * MOCHA ROLL 6 eggs, separated 1 cup sugar 3 tbsps. cocoa 1/2 cup cake meal 2 tbsp. strong coffee 1 tsp. vanilla, optional 1/2 pint whipping cream 2 tbsps. sugar Grease, line with waxed paper and grease again a 12 by 18 inch jelly roll pan. Beat whites until stiff. Gradually beat in one cup sugar until they form stiff peaks. Beat yolks until thick and lemon- colored. Fold into whites. Sift cocoa with cake meal and fold into egg mixture alternatively with coffee and vanilla. Bake at 350 degrees, 15-18 minutes. Cool in pan 3 min- utes. Turn onto towel sprin- kled with cocoa. Peel off waxed paper. Roll up with towel from short end and cool on rack. When cool, fill with cream whipped with 2 tbsps. sugar. Roll and top with bit- tersweet frosting if desired. Chill or freeze. Yield: 12 serv- ings. * * * APPLE CAKE 9 egg yolks 3 tbsps. lemon juice 2 tsps. grated lemon peel 2 cups sugar, divided 1/2 cup cake meal 1 /3 cup potato starch 9 stiffly beaten egg whites 4 medium apples, pared and sliced (4 cups) 2 tbsps. water 1/2 cup chopped nuts 1 tbsp. lemon juice 1 tsp. cinnamon Preheat oven to 325 de- grees. Beat egg yolks, lemon juice, and lemon peel until thick. Gradually add 1 cup sugar, beating until smooth. Sift 1/2 cup sugar, cake meal, and starch together. Blend into yolk mixture. Fold in be- aten egg whites. Spread half of batter in ungreased 9x13x2 inch pan. Bake 30-35 minutes. Cook apples in water, covered, over low heat until barely tender (8-10 minutes). Stir 1/2 cup sugar, nuts, remain- ing juice and cinnamon into apples, and arrange apple mix- ture over cake. Cover with re- maining batter. Bake at 325 degrees 50-60 minutes more. Cool. Yield: 16 servings. Midrasha, Women's ORT Join for Lunch, Lectures The Midrasha, College of Jewish Studies, and Women's American ORT are planning a lunch and lecture series for ORT Day 1983. The theme of the two-part series is the "World of Jewish Art." On March 15 at noon, the topic will be "Jewish Art: Its Roots, Ritual Art." Esther Tarnoff Cooper, artist and lecturer of the Speaker's Bureau, Detroit Institute of Arts, will be the featured speaker. As an artist, Mrs. Cooper has worked in many mediums. She is a member of Cong. Beth Shalom and active at the Detroit Insti- tute of Arts in the Arts to the Schools Program and the Speakers Bureau lectur- ing on both modern and ritual Jewish art. She has been an in- structor at Oakland Community College and ESTHER TARNOFF COOPER Community Education Center. On March 22, the topic "Jewish Art in Israel" will be discussed by Rickie Lauf- fer. Ms. Lauffer is an artist especially interested in silkscreening, printmaking and weaving. Her professional training is in the field of art educa- tion. There is a charge for the series.
