TRUE AUTHENTIC
Cantonese dining is a dis-
tinction all its own . . . No
such thing as chop suey, egg
foo young or chow mein .. .
These are Chinese dishes
. . . in essence, also Ameri-
can.
Cantonese food is also
stir-fried and then cooked in
a wok . . . Chinese dishes
are prepared only in a wok
. . . with much more gravy
. . . Cantonese has very lit-
tle, if any, gravy.
One of the few places in
this area that is known for
its true Cantonese style of
cuisine is Jade Tiki in the
Kroger Shopping Center on
South Blvd. (20 Mile Rd.)
between Adams and Op-
dyke, about two miles from
Pontiac Silverdome.
Although hidden in the
shopping center, Jade
Tiki, seating 170, has
been found by people
learning about its exist-
ence and the difference
between Chinese and
Cantonese ... Owners
Sun Leung (in kitchen)
and sons Tom and Allen
(out front) are from a
small village in Canton
... In the kitchen with
Dad are also sons Jimmy
and Phillip Leung.
We had a lunch that was
entirely different from any
oriental cuisine experience
. . . extra crisp, crunchy
spring rolls (egg rolls with
chicken and shrimp, very
tasty winter melon soup
(shrimp, beef, chicken, me-
lon, etc.), excellent shred-
ded chicken and vegetables
with golden mushrooms .. .
and delicious beef with gol-
den mushrooms.
These are among a large
array of Cantonek dishes of
the Jade Tiki menu which is
divided into four entree
categories . . . Szechuan,
Cantonese, Chinese and
American . . . Each except
the Cantonese main courses
has one page . . . The food of
Canton with its distinct ab-
sence of gravy takes up four
pages.
Dessert was a coconut
pudding (made from
coconut milk), very light
with the real taste of
coconut.
Authenticity in Can-
tonese dining is a revela-
tion at Jade Tiki ... as
dishes very few places
have are uncovered.
The golden mushroom
grown in Taiwan is a long
sprout with tiny mushroom
cap at its end . . . It is among
the only places here serving
frog legs with black bean
sauce, shredded beef or
chicken with golden mush-
room and other dishes . . . It
is about the only place we
know that serves winter
melon soup.
Dim Sum, the Cantonese
term for delicious tidbits, is
a large specialty at Jade
Tiki . . . The small, delight-
ful concotions are made
from meat and seafood .. .
with many scarcely larger
than bite-size . . . They come
steamed, fried, baked or
boiled.

The only other place in
this area that serves Dim
Sum is New Peking in Gar-
den City . . . just a few items
though . . . not full menu as
Jade Tiki.
In her book, "Eating
The Chinese Way In De-
troit" Elizabeth Chiu
King writes that Dim Sum
"is literally translated as
dainty morsels that touch
the heart." For indeed
they do.
"Dim Sum is served in
small plates or miniature
bamboo steam racks and
come in many varieties.
Large tea rooms can serve
as many as 50 of these
scrumptious appetizers.
The number does not in-
clude the more substantial
platters of noodles and
bowls of rice soup that are
also served. By choosing an
assortment, one can indulge
in a variety of tastes, tex-
tures and flavors."
"Miscellany," says
Elizabeth Chiu King, "often
includes dun tart, egg cus-
tards in flaky shells, fried
spring rolls, etc."
Jade Tiki can boast an
identity all its own when it
comes to Cantonese dining.
COUPLE OF
READERS recently spent
over $100 at the Summit
atop Westin Hotel in Re-
naissance Center . . . but it
was the paying of $1.50 each
way to ride the elevator that
irked them most . . . "Im-
agine," says one, "not even
taken off the check!" .. .
Wonder how else they could
have gotten to the Summit?
. . . Even if they wanted to
walk 73 floors, it's not
allowed . . . and neither of
them can fly.
THERE'S NEW man-
agement at Merrick's in
American Motors Center on
Franklin, a block west of
Telegraph and just north of
11 Mile . . . undoubtedly the
reason why it has gotten so
much better.
Richard Carlson and
Robert Carmichael, both
local gents and re-
staurateurs, have taken
hold to give their elegant-
looking restaurant the
touch it needed . . . better
food and service.
Richard owned Frontier
Beef Buffet in Ann Arbor
. . . and then was general
manager of Masonic Temple
for three years . . . also in
charge
of its entire food op-
,
eration . . . and the gent re-
sponsible for re-
establishment of live thea-
ter there ("The King & I,"
etc.)
Robert was vice president
of a large food service man-
agement company.
Both know food and serv-
ice . . . for sure.
Merrick's seats 200
people in a beauteous,
charming atmosphere ...
now specializing in fresh
fish and aged beef ...
plus its very popular
salad bar.
Private banquet rooms
handle 150 and 65.
