THE DETROIT JEWISH NEWS
The chief pleasure in eat-
ing does not consist in costly
seasoning or exquisite
flavor, but in yourself. Do
you seek sauce by labor?

"Now comes harassment
by the Michigan Board of
Health against the deli
operators. It seems they
claim that the age-old cus-
tom (practice) of 'hanging
the salami' to dry them out
in order to get 'medium' or
`hard' salami is now consid-
ered a 'health risk.'
"It is time the deli oper-
ators, the manufacturers of
the products and the
wholesale distributors
unite and work together —
not try to destroy each
other. Perhaps then the deli
patron will "ess-delicate'
again!"

"P.S. I have my own ex-
planation of 'gefilte fish,'
really fish balls. Where did
the name 'gefilte fish' (filled
fish) come from79297"
WHILE IN AUSTIN,
TEXAS, we found another
new discovery . . . a Chinese
restaurant that doesn't
know how to make
Chinese-American food .. .
It's called Chiu's, and beef
chow mein, for example, to
them is pieces of beef and
slices of onions . . . What-
ever the other things were,
they sure didn't -resemble
Chinese food that we know
. . . except, that is, the egg
rolls, which are ready made.
There's one delicatessen
in Austin, Katz's, and
plenty of Mexican restau-
rants . . . Max Ball also vis-
ited from Southfield and
raved about a place called
County Line, where they
serve big beef ribs a la Texas
style . . . It's the closest we
ever came to the phantom
Texas barbeque.
Scott Selik, son of Dr.
Martin and Harriet Selik,
attends Universit3r of
Texas, too . . . and is only
sorry he can't take his faith-
ful dog, Bohenka, to classes
with him.
Still haven't gotten to
Bagelstein's in Dallas as
hoped ... to visit with own-
ers Larry and Susan Golds-
tein . . . However, localite
CPA Herb Goldstein, Lar-
ry's dad, supplied us with a
list of former Detroiters . .
regulars there every Sun-
day and some everyday:
Leo and Faye Schoenfeld,
Lou and Ruth Zack, Dean
and Mathew Fuller, Shelly
Goldstein, Michael and
Nancy Klein, Herb and
Maxine Schwartz, Jerry
and Reva Kurtis, Stan and
Phyliss Blankman, Al
Marks, Don Rubin, Chuck
and Joyce Rosenberg, Mic-
key and Karen Kurzman,
David and Debbie Wayne,
Don and Anita Mechanic,
Eddie and Marcia Weiner,
Leslye Goldstein, Herb Gil-
lis, Barry and Flo Zack, Re-
becca Tarnow, Myrna and
Richard Green and Paula
and Marshall Tarnow .. .
"There are many more too
numerous to mention," adds
Herb.
HY HORENSTEIN is 72
years old ... certainly
latter, so many more must
you have of the former.
—H. Mann
Jails and prisons are the
complement of schools; so
many less as you have of the
doesn't look his age .. .
whether it's behind the
counter at his deli-
restaurant on 10 Mile and
Coolidge in the Farmer
Jack (Dexter-Davison)
shopping center . . . or out
on the town in his flashy
duds (like a mink coat and
mink hat).
Hy is the oldest active del-
icatessen man in Michigan
. . . Vienna's oldest cus-
tomer (going on 52 years)
. . . still cutting his own
bread and fresh French fries
which have been
trademarks of Hy over the
years.
He started out in the deli
game as a busboy 58 years
ago at Boesky's on 12th and
Hazelwood . . . then as coun-
terman with Sam Boesky
when he opened on Gris-
wold and Michigan, calling
it Sam Boesky's . . . Hy's
first place as an owner was
on Farmer and Monroe near
the Water Board Bldg. . .
then came Six Mile and
Santa Barbara, Dexter and
Boston five years, across the
street on Dexter next to
Epstein Bakery another
five years . . . Livernois and
Seven Mile Rd. . . . and his
present 58-seater location
on Coolidge and 10 Mile .. .
where he's been the last 20
years.
Hy can do anything
necessary in the restau-
rant game ... from wash-
